Pour ce plat, les nouilles de riz sont saut\u00e9es avec de la sauce soja fonc\u00e9e qui s&rsquo;appelle <strong><em>see ew dam<\/em><\/strong> en Tha\u00ef. \u00ab\u00a0<em>Pad see ew<\/em>\u00a0\u00bb signifie \u00ab\u00a0saut\u00e9 \u00e0 la sauce soja fonc\u00e9e\u00a0\u00bb. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Type de nouilles de riz <\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<p>Les nouilles de riz se trouvent le plus souvent en 3 largeurs diff\u00e9rentes: <br>&#8211; <em><strong>sen lek<\/strong> :<\/em> les nouilles de riz fines qui ressemblent \u00e0 <a href=\"https:\/\/www.aupaysdespiments.com\/en\/vermicelles-oranges-nouilles-sautees\/\" target=\"_blank\" rel=\"noreferrer noopener\">des vermicelles<\/a>. pour la soupe ou les plats saut\u00e9s &#8211; on pr\u00e9cise le type de nouilles qu&rsquo;on souhaite et la mani\u00e8re de les cuisiner. Par exemple, on peut commander : <em>Pad see ew sen klang<\/em>, pour avoir des nouilles de riz pas trop larges saut\u00e9es \u00e0 la sauce soja. <\/p>\n\n\n\n<p><strong>NOTE IMPORTANTE POUR LES NOUILLES DE RIZ<\/strong> : <br>Nous utilisons toujours des nouilles fra\u00eeches pour pr\u00e9parer ce plat. <strong>Si tu utilises des nouilles s\u00e9ch\u00e9es<\/strong>, il faut les pr\u00e9-cuire quelques minutes dans l&rsquo;eau bouillante.  Lorsqu&rsquo;elles sont \u00e0 peine tendre, trempe-les dans l&rsquo;eau froide pour stopper la cuisson. Elle est tr\u00e8s douce, comme son nome l&rsquo;indique. Elle n&rsquo;est pas vraiment sucr\u00e9e mais a un l\u00e9ger go\u00fbt de r\u00e9glisse. Elle est plus \u00e9paisse que les 2 autres types de sauces soja et tr\u00e8s noire. On la sert g\u00e9n\u00e9ralement avec le riz au poulet. Elles marche bien dans les marinades, et les plats de nouilles. G\u00e9n\u00e9ralement l&rsquo;appellation en anglais est inscrite sur la bouteille : <em>Dark Soy Sauce. <\/em><\/p>\n\n\n\n<p>J&rsquo;essaie toujours de choisir des versions bio de ces sauces, elle sont sans MSG (glutamate) ajout\u00e9. Mais tu peux utiliser des sauces normales d&rsquo;autres marques pour cette recette. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Les autres sauces <\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>Pour cette recette, on utilise \u00e9galement de la sauce d&rsquo;hu\u00eetre et de la sauce de poisson. Ce sont les 2 sauces d&rsquo;assaisonnement principales pour la cuisine tha\u00eflandaise. Il faut aussi du vinaigre de riz. Fais de m\u00eame si tu utilises du porc ou du boeuf, mais pas pour les fruits de mer. <\/p>\n\n\n\n<p>\ud83c\udf36\ufe0f <strong>Nous avons blanchi les brocolis chinois <\/strong>avant de les passer au wok. Je recommande de ne pas zapper cette \u00e9tape. Ils sont nettement meilleur une fois blanchis. On ajoute aussi un peu de sucre, cela permet de les faire \u00ab\u00a0caram\u00e9liser\u00a0\u00bb et c&rsquo;est vraiment d\u00e9licieux. <\/p>\n\n\n\n<p>\ud83c\udf36\ufe0f <strong>Ce plat se pr\u00e9pare dans un wok (ou une po\u00eale) \u00e0 feu vif<\/strong>. Si la chaleur n&rsquo;est pas assez \u00e9lev\u00e9e, les nouilles ne vont pas griller correctement et seront un peu p\u00e2teuses.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Voici la recette en
