On peut y cuire du poisson, des fruits de mer ou de la viande, \u00e0 choix. Attention, on ne m\u00e9lange pas les torchons et les serviettes. Il m&rsquo;a fait tout un la\u00efus pour m&rsquo;expliquer, en gros, que mon Tom Yam n&rsquo;a simplement pas un go\u00fbt assez prononc\u00e9 pour les gens du sud. Ce n&rsquo;est pas un ingr\u00e9dient indispensable et le jus de lime va tr\u00e8s bien.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Tom yam nam khon (creamy) or tom yam nam sai (clear broth)<\/h3>\n\n\n\n<p>Il existe plusieurs versions de tom yam. Ici, je te propose le<em><strong> tom yam nam sai<\/strong> <\/em>qui est la version traditionnelle. C&rsquo;est un bouillon clair et l\u00e9ger bien acidul\u00e9 et piment\u00e9. C&rsquo;est ainsi que je le pr\u00e9f\u00e8re quand je le cuisine avec du poisson. <br>Tu peux, si tu pr\u00e9f\u00e8res, pr\u00e9parer un <strong><em>tom yam nam khon<\/em><\/strong>, qui est une version moderne \u00e0 laquelle on ajoute de la confiture de piment <em>(nam prik pao)<\/em> et du lait condens\u00e9 non sucr\u00e9. Chaque fois que je cuisine des crevettes, je garde les carapaces et les t\u00eates au cong\u00e8le et je les ressors pour le pr\u00e9parer le bouillon. Depuis quelques temps, je mets du galanga et de la citronnelle \u00e0 cuire dans le bouillon avec les carapaces de crevettes et je laisse mijoter pour d\u00e9velopper les parfums de ce bouillon, je filtre le bouillon pour l&rsquo;utiliser dans le tom yam et ensuite j&rsquo;ajoute \u00e0 nouveau citronnelle, galanga et combava dans le bouillon au dernier moment pour le parfumer et apporter de la vivacit\u00e9 et de la fra\u00eecheur. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pr\u00e9parer le bouillon maison<\/h3>\n\n\n\n<p>Place 1 lt d&rsquo;eau dans une casserole avec les carapaces et les t\u00eates des crevettes. Ajoute 3 gousses d&rsquo;ail \u00e9cras\u00e9es, un oignon coup\u00e9 grossi\u00e8rement, quelques tranches de galanga, 2 b\u00e2tons de citronnelle \u00e9cras\u00e9s et 4-5 feuilles de combava. Porte \u00e0 \u00e9bullition et laisse cuire \u00e0 feu moyen durant 15 minutes.
