La recette de <em>p\u00eaches percoche au jus<\/em> m&rsquo;a imm\u00e9diatement fait de l&rsquo;oeil, de m\u00eame que celle du <em>Pesto cetarese<\/em> \u00e0 base anchois, d&rsquo;olives et de c\u00e2pres. Malheureusement, difficile (impossible, m\u00eame) de trouver de belles p\u00eaches ou de bonnes olives en Tha\u00eflande ! Je me suis vite redirig\u00e9e vers les chapitres d\u00e9di\u00e9s aux mixtures poissonneuses des pays d&rsquo;Asie et me suis d\u00e9lect\u00e9e de cette lecture\u00a0: <strong>Japon, Cor\u00e9e, Chine, Myanmar, Laos, Tha\u00eflande, Cambodge, Vietnam, Malaisie, Philippines et Indon\u00e9sie<\/strong>. Inconditionnelle de la sauce ponzu, pour une raison incongrue, je n&rsquo;ai jamais pens\u00e9 \u00e0 la pr\u00e9parer moi-m\u00eame. J&rsquo;ach\u00e8te toujours ces (trop) petites bouteilles de sauce \u00e0 prix d&rsquo;or, et j&rsquo;en mets un peu partout : salade, sauce \u00e0 trempette, dim sum, riz, nouilles&#8230; aucune limite. Ce livre m&rsquo;a non seulement donn\u00e9 envie de me mettre \u00e0 la pr\u00e9parer, mais aussi d&rsquo;en avoir 2 versions : traditionnelle \u00e0 base de sauce soja et cette variante tha\u00efe intrigante. Hyper fi\u00e8re de mes nouvelles sauces, je me suis empress\u00e9e de les faire go\u00fbter \u00e0 Nan en imaginant son visage grima\u00e7ant m&rsquo;annoncer que c&rsquo;est consommable, mais pour les autres. Que n\u00e9ni : il a approuv\u00e9 et ador\u00e9.
