On la reconna\u00eet facilement \u00e0 sa couleur rouge brillante et \u00e0 son go\u00fbt tr\u00e8s particulier, \u00e0 la fois sucr\u00e9, sal\u00e9 et l\u00e9g\u00e8rement fum\u00e9. Mais la version traditionnelle au porc reste probablement la plus parfum\u00e9e et la plus gourmande, gr\u00e2ce \u00e0 son gras l\u00e9g\u00e8rement sucr\u00e9 qui fond pendant la cuisson vapeur. M\u00eame en petite quantit\u00e9, <strong>le kun chiang apporte \u00e9norm\u00e9ment de saveur au plat.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Le gingembre frais : la base aromatique du plat<\/h3>\n\n\n\n<p>Impossible d\u2019imaginer cette recette sans gingembre frais. Pendant la cuisson vapeur, le gingembre diffuse lentement son parfum dans le poulet et dans le jus de cuisson. Il apporte \u00e0 la fois de la fra\u00eecheur, un peu de chaleur et ce c\u00f4t\u00e9 tr\u00e8s r\u00e9confortant que l\u2019on retrouve souvent dans les plats asiatiques mijot\u00e9s ou cuits \u00e0 la vapeur. J\u2019aime particuli\u00e8rement utiliser une fine julienne de gingembre dans ce plat plut\u00f4t que du gingembre hach\u00e9 (et surtout pas de gingembre en poudre). Leur parfum devient encore plus agr\u00e9able au contact de la vapeur chaude du poulet fra\u00eechement cuit.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Une cuisine simple, inspir\u00e9e du quotidien asiatique<\/h3>\n\n\n\n<p>Ce que j\u2019aime dans ce genre de recette, c\u2019est justement sa <strong>simplicit\u00e9<\/strong>. Pas besoin de techniques compliqu\u00e9es ou d\u2019une longue liste d\u2019\u00e9pices : quelques bons ingr\u00e9dients suffisent \u00e0 cr\u00e9er quelque chose de profond\u00e9ment
