Alors attention, ne va pas t\u2019imaginer que j\u2019ai \u00e9tudi\u00e9 la langue, j\u2019ai juste pris plusieurs semaines de cours pour les nuls, genre super d\u00e9butant puis d\u00e9butants moyens. Comme je ne connaissais alors que le sud du pays, j\u2019ai d\u00e9couvert la r\u00e9gion de Chiang Mai et ses multiples d\u00e9lices culinaires. J\u2019y ai pris des cours de cuisine tha\u00efe \u2013 j\u2019ai d\u2019ailleurs pass\u00e9 \u00e0 la t\u00e9l\u00e9 durant ces cours, sans le savoir \u2013 j\u2019ai sillonn\u00e9 les march\u00e9s et les stands de street food, j\u2019y ai mang\u00e9 les premi\u00e8res kanoum jiin de ma vie et plein de plats avec du porc crousti-fondant. En bref, je m\u2019en suis mis plein les yeux et plein la panse. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Le Khao Soi, une sp\u00e9cialit\u00e9 incontournable de Chiang Mai<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">A l\u2019\u00e9poque internet n\u2019\u00e9tait pas encore un reflex pour d\u00e9nicher un restaurant, et j\u2019avais lu dans un guide papier (si si) qu\u2019il ne fallait pas venir \u00e0 Chiang Mai sans go\u00fbter au<strong> khao soi<\/strong>, <strong>curry embl\u00e9matique de Chiang Mai<\/strong> et du Nord de la Tha\u00eflande. Traditionnellement, cette soupe de nouilles au curry est pr\u00e9par\u00e9e avec du poulet ou du b\u0153uf longuement mijot\u00e9 dans un bouillon riche en \u00e9pices et en lait de coco. Les nouilles peuvent \u00eatre servies bouillies, frites ou, le plus souvent, sous les deux formes dans le m\u00eame bol.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je me suis donc mise en qu\u00eate du meilleur restaurant de khao soi de la r\u00e9gion de Chiang Mai, j\u2019ai r\u00e9serv\u00e9 une table et, pleine d\u2019excitation, je m\u2019y suis rendue pour ce repas tant attendu. Et, l\u00e0\u2026 tu connais le coup du souffl\u00e9 qui retombe ? J\u2019ai re\u00e7u un mini bol de nouilles toutes molles recouvertes de lait de coco \u00e0 peine parfum\u00e9 et d\u2019une cuisse de poulet trop cuite. Je n\u2019ai pas retent\u00e9 l\u2019exp\u00e9rience en me disant que je pr\u00e9f\u00e9rais nettement les curries qui arrachent, ceux du sud. <\/p><div id=\"aupay-2567839651\" class=\"aupay-insert-post aupay-entity-placement\" style=\"margin-top: 6px;margin-bottom: 6px;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-4895771430947602\" crossorigin=\"anonymous\"><\/script><ins class=\"adsbygoogle\" style=\"display:block; text-align:center;\" data-ad-client=\"ca-pub-4895771430947602\" \ndata-ad-slot=\"8266270428\" \ndata-ad-layout=\"in-article\"\ndata-ad-format=\"fluid\" data-full-width-responsive=\"true\"><\/ins>\n<script> \n(adsbygoogle = window.adsbygoogle || []).push({}); \n<\/script>\n<\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Ce n\u2019est que quelques ann\u00e9es plus tard, qu\u2019une amie m\u2019a apport\u00e9 <a href=\"https:\/\/www.facebook.com\/aupaysdespiments\/videos\/746037895987396\">un petit sachet avec un khao soi pr\u00e9par\u00e9 maison par sa tante<\/a>. Mon premier essai, encore bien vivace dans ma m\u00e9moire, je l\u2019ai remerci\u00e9e du bout des l\u00e8vres en  me disant int\u00e9rieurement: \u00ab\u00a0Mince, j\u2019aurais pr\u00e9f\u00e9r\u00e9 des fruits\u00a0!\u00a0\u00bb J\u2019ai mang\u00e9 ce khao soi presque \u00e0 contre coeur et le souffl\u00e9 est remont\u00e9 d\u2019un seul coup ! Papilles en extase, tous les sens affol\u00e9s, j\u2019ai d\u00e9vor\u00e9 tout ce qui \u00e9tait dans le bol devant moi. Gros coup de coeur !  <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Des nouilles au curry tha\u00eflandais uniques<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Au fond du bol, on retrouve des nouilles aux \u0153ufs tendres qui absorbent le bouillon parfum\u00e9 au curry. Sur le dessus, une g\u00e9n\u00e9reuse poign\u00e9e de nouilles frites apporte une touche croustillante qui contraste parfaitement avec le reste du plat. Le m\u00e9lange de textures est fantastique mais ce qui fait un d\u00e9licieux khao soi, c\u2019est le curry qui accompagne les nouilles. C\u2019est vraiment par hasard, que j\u2019ai eu l\u2019occasion de d\u00e9guster un <strong>khao soi au boeuf <\/strong>absolument fantastique en me baladant avec des amis dans le village artistique (et touristique) Baan Kang Wat. Son histoire refl\u00e8te les \u00e9changes entre les populations tha\u00efes, birmanes, chinoises et musulmanes qui ont fa\u00e7onn\u00e9 la r\u00e9gion de Chiang Mai au fil des si\u00e8cles. Le curry utilis\u00e9 dans cette recette contient g\u00e9n\u00e9ralement du curcuma, de la coriandre, du gingembre et diff\u00e9rentes \u00e9pices qui lui donnent sa couleur jaune caract\u00e9ristique et son go\u00fbt unique. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je te propose ici une p\u00e2te de curry maison. Il en existe un tr\u00e8s grand nombre de variations, avec de la poudre du curry inside ou non. C\u2019est une recette que j\u2019ai tir\u00e9e du <a href=\"https:\/\/amzn.to\/4nX6cbN\"><strong>superbe livre d\u2019Austin Bush sur la cuisine du Nord de la Tha\u00eflande<\/strong><\/a>. J\u2019ai pouss\u00e9 le vice \u00e0 faire la p\u00e2te de curry maison, mais il est bien \u00e9vident que tu peux acheter une p\u00e2te \u00e0 khao soi toute pr\u00eate ou m\u00eame utiliser un bon curry rouge auquel tu ajoutes un peu de gingembre. La cardamome verte est celle qu\u2019on voit le plus souvent en Europe, elle est tr\u00e8s utilis\u00e9e dans la cuisine indienne. La blanche se trouve couramment en Asie du Sud-Est, elle fait partie int\u00e9grante d\u2019un grand nombre de p\u00e2tes de curry tha\u00efs. La cardamome noire, elle, se trouve difficilement sur les march\u00e9s du sud du pays. Dans le sud, on ajoute toujours un peu de p\u00e2te de crevette aux currys pour leur donner un peu de profondeur et de l\u2019umami. Et \u00e0 ma grande surprise, ces galettes de soja ferment\u00e9 apportent exactement le m\u00eame petit truc en plus \u00e0 un curry. un peu comme une p\u00e2te de miso ou une sauce soja grand cru, mais sans apporter trop de salinit\u00e9. D\u2019ailleurs, le thua nao est parfois surnomm\u00e9 le \u00ab\u00a0miso tha\u00eflandais\u00a0\u00bb en raison de sa richesse en umami et de son r\u00f4le d\u2019exhausteur de go\u00fbt naturel. Un super moyen de remplacer la p\u00e2te de crevette dans les plats cuisin\u00e9s.
