Le poisson, c&rsquo;est bon et c&rsquo;est facile \u00e0 cuisiner.<\/p>\n<p style=\"text-align: justify;\">A part quelques rares et fantastiques tartare de thon (shame on me!!), je cuisinais principalement des poissons du lac achet\u00e9s directement chez le p\u00eacheur. Je n&rsquo;\u00e9tais donc pas consciente des probl\u00e8mes de surp\u00eache et de danger d&rsquo;extinction d&rsquo;une grande quantit\u00e9 d&rsquo;esp\u00e8ces de poissons.<br \/>\nLes populations de poissons dans le lac suisses sont surveill\u00e9es de pr\u00e8s, il y a des saisons de p\u00eache pour assurer des p\u00e9riodes tranquilles aux poissons lors de la saison de reproduction, il y a aussi des quotas pour les p\u00eacheurs. Les langoustes ont disparu alors qu&rsquo;elles existaient en nombre il y a de cela 6 ans. On ne voit plus de gros m\u00e9rou, plus de poissons de r\u00e9cif de plus de 40cm de long&#8230; Bref, la liste est longue.<\/p>\n<p style=\"text-align: justify;\"><strong>A quoi cela est-il d\u00fb<\/strong>, me diras-tu ?<!--more--><br \/>\nEh bien cela est d\u00fb \u00e0 un tas de facteurs mis ensemble :<br \/>\n&#8211; <strong>le tourisme <\/strong>a explos\u00e9 dans cette r\u00e9gion, cela a entrain\u00e9 l&rsquo;ouverture d&rsquo;un nombre consid\u00e9rable de restaurants qui cuisinent du poisson frais de la r\u00e9gion.<br \/>\n&#8211; <strong>les techniques de p\u00eache<\/strong> ont chang\u00e9 : il existe des sonars tr\u00e8s efficaces pour rep\u00e9rer les bancs de poissons et \u00e9viter de rentrer broucouille \u00e0 la maison<br \/>\n&#8211; <strong>les bateaux de p\u00eache<\/strong> ont \u00e9volu\u00e9 : fini les petites barques familiales. Bonjour les giga-compagnies qui investissent dans de monstrueux bateaux.<br \/>\n&#8211; <strong>le manque de contr\u00f4le <\/strong>: pas de saison de p\u00eache, pas de ferme pour la production d&rsquo;alvins \u00e0 rel\u00e2cher dans la nature, aucun sanctuaire marin dans lequel les bateaux de p\u00eache ne sont pas admis.<br \/>\n&#8211; <strong>le manque de poissons<\/strong> dans certaines zones de p\u00eache autrefois abondantes poussent de plus en plus de bateaux \u00e0 venir d\u00e9cimer les zones encore pleines de vie.<br \/>\n&#8211; <strong>l&rsquo;\u00e9conomie<\/strong> : autrefois la p\u00eache \u00e9tait un secteur prosp\u00e8re employant beaucoup de personnel dans la r\u00e9gion. Aujourd&rsquo;hui, de par le manque de poissons, il est difficile de gagner sa vie correctement en tant que p\u00eacheur. A partir du moment o\u00f9 les gens commencent \u00e0 prendre conscience que probl\u00e8me il y a, on peut esp\u00e9rer une \u00e9volution et peut \u00eatre m\u00eame, un jour, une solution.<br \/>\nEnsuite, <strong>chacun de nous peut faire sa part en s\u00e9lectionnant sa nourriture correctement.<\/strong> Il est facile d&rsquo;obtenir des informations sur internet. En fonction de la r\u00e9gion o\u00f9 on habite, on peut obtenir une liste des <a href=\"https:\/\/www.aupaysdespiments.com\/en\/poisson-a-la-noix-de-coco-et-au-tamarin\/\" target=\"_blank\" rel=\"noopener\">poissons<\/a> \u00e0 \u00e9viter et de ceux recommand\u00e9s.<br \/>\nPour ma part, je ne mange aucun poisson de r\u00e9cif, je ne mange ni requin ni raie, le thon est bani de mon frigo (snif, d\u00e9sespoir&#8230;). Pas d&rsquo;espadon, pas de m\u00e9rou, pas de langouste. Je mange des crevettes qui viennent d&rsquo;\u00e9levage uniquement (oui, l\u00e0, on entre dans un autre d\u00e9bat de catastrophe \u00e9cologique), des calmars, des carrangues et des snappers d&rsquo;\u00e9levage \u00e9galement.<br \/>\nC&rsquo;est aussi bien de simplement s&rsquo;int\u00e9resser au probl\u00e8me en regardant des films sur le sujet.<br \/>\nAvez-vous vu &#8230;<br \/>\n&#8211; shark water : superbe documentaire sur les dangers d&rsquo;extinction d&rsquo;un grand nombre d&rsquo;esp\u00e8ces de requins. Les images sont magnifiques, les informations passionnantes.<br \/>\n&#8211; the end of the line : documentaire effrayant mais captivant sur la surp\u00eache.<br \/>\nIl y a de nombreux autres films mais ces deux ont \u00e9t\u00e9 les plus marquants pour moi.
