Dans cette version revisit\u00e9e, le tamarin apporte une agr\u00e9able touche acidul\u00e9e qui \u00e9quilibre parfaitement la richesse de la viande et la douceur de la sauce.<br>Si vous aimez <strong>les plats mijot\u00e9s aux saveurs profondes<\/strong>, les recettes traditionnelles du sud de la Tha\u00eflande et le go\u00fbt unique du tamarin, cette recette risque fort de devenir l\u2019une de tes pr\u00e9f\u00e9r\u00e9es.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ma d\u00e9couverte du Moo Hong \u00e0 Phuket<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">J\u2019ai d\u00e9couvert le Moo Hong lors d\u2019un s\u00e9jour \u00e0 Phuket, dans le sud de la Tha\u00eflande. Je me suis rendue dans un restaurant r\u00e9compens\u00e9 d\u2019un Bib Gourmand (One Chun Cafe & Restaurant). Affam\u00e9e et surprise, j\u2019ai h\u00e9sit\u00e9 \u00e0 c\u00e9der ma place et \u00e0 repartir par o\u00f9 j\u2019\u00e9tais arriv\u00e9e, lorsqu\u2019un gros rat bien d\u00e9gueux s\u2019est mis \u00e0 courir le long des murs. Si je n\u2019avais pas d\u00e9j\u00e0 pass\u00e9 de nombreuses ann\u00e9es en Tha\u00eflande, je pense honn\u00eatement que cela m\u2019aurait coup\u00e9 l\u2019app\u00e9tit. Mais ma fringale a rapidement repris le dessus et j\u2019ai patiemment attendu qu\u2019une table se lib\u00e8re.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Le Moo Hong traditionnel : d\u00e9licieux mais tr\u00e8s riche<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Lorsque le Moo Hong est arriv\u00e9 \u00e0 table, je m\u2019attendais \u00e0 ce que les chaussettes m\u2019en tombent, vu le succ\u00e8s du restaurant et sa recommandation Michelin\u2026 j\u2019avais pas de chaussettes mais si j\u2019en avais eu, je ne les aurais pas perdues. Pour \u00eatre totalement honn\u00eate, je n\u2019ai pas de point de comparaison, c\u2019est la seule et unique fois que j\u2019ai mang\u00e9 ce plat. Je l\u2019ai trouv\u00e9 un (gros) poil trop sucr\u00e9 et la viande, que j\u2019attendais fondante \u00e0 souhait, \u00e9tait trop filandreuse. Par contre, la sauce est riche, parfum\u00e9e, et les ar\u00f4mes de poivre, d\u2019ail et d\u2019\u00e9pices chinoises particuli\u00e8rement s\u00e9duisants. M\u00eame si j\u2019ai ADOR\u00c9 la saveur et le piquant du poivre, la poitrine de porc tr\u00e8s grasse et la sauce particuli\u00e8rement douce, m\u2019ont rapidement \u00e9coeur\u00e9e, me laissant repartir avec un sentiment mitig\u00e9. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Qu\u2019est-ce que le Moo Hong Som ?<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Puis un soir, en regardant une \u00e9mission tha\u00eflandaise de cuisine \u2014 je crois qu\u2019il s\u2019agissait de Restaurant War Thailand \u2014 une candidate originaire de Pheng Nga a pr\u00e9par\u00e9 un Moo Hong Som.  Le principe \u00e9tait simple : enrichir et \u00e9quilibrer la sauce avec du tamarin (<em>som<\/em> signifie \u00ab acide \u00bb ou \u00ab acidul\u00e9 \u00bb en tha\u00ef). Son acidit\u00e9 naturelle apporte de la fra\u00eecheur et de la complexit\u00e9 aux plats mijot\u00e9s, aux sauces et aux salades.<br>Et l\u00e0, mon cerveau est imm\u00e9diatement pass\u00e9 en mode recette \ud83e\udde0  =><br>+ le Moo Hong m\u2019interpelle<br>+ J\u2019adoooooore le tamarin<br>= le mariage des deux ne peut qu\u2019\u00eatre qu\u2019une r\u00e9ussite !! Alors forc\u00e9ment, lorsqu\u2019une recette tha\u00eflandaise promet d\u2019associer un porc brais\u00e9 fondant \u00e0 l\u2019acidit\u00e9 fruit\u00e9e du tamarin, il est imp\u00e9ratif de s\u2019y essayer. <strong>Cette petite touche acidul\u00e9e transforme compl\u00e8tement le caract\u00e8re du plat sans lui faire perdre son identit\u00e9.<\/strong><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Une version plus l\u00e9g\u00e8re avec de l\u2019\u00e9paule de porc<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">J\u2019en ai profit\u00e9 pour remplacer la poitrine de porc traditionnelle par du Boston Butt, un morceau issu de l\u2019\u00e9paule de porc. Apr\u00e8s plusieurs heures de cuisson (ou 40 minutes en cocotte minute), la viande devient tout aussi fondante, mais avec beaucoup moins de gras. Bien entendu, si tu souhaites r\u00e9aliser une version plus proche du Moo Hong traditionnel de Phuket, tu peux parfaitement utiliser de la poitrine de porc.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Un porc brais\u00e9 tha\u00eflandais parfum\u00e9 et r\u00e9confortant<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Cette recette de <strong>porc brais\u00e9 tha\u00ef au tamarin<\/strong> conserve tout ce qui fait le charme du Moo Hong de Phuket : une sauce sombre et brillante, des saveurs profondes, une viande ultra tendre et un parfum irr\u00e9sistible de poivre, d\u2019\u00e9pices et d\u2019ail. Mais elle y ajoute cette petite note acidul\u00e9e qui fait toute la diff\u00e9rence.
