Le mois dernier, \u00e0 nouveau en Suisse, je n&rsquo;\u00e9tais pas arriv\u00e9e depuis 3 jours que Jess me r\u00e9clamait du poisson au tamarin. Nathalie qui a toujours l&rsquo;oreille aff\u00fbt\u00e9e lorsqu&rsquo;il s&rsquo;agit de nourriture a repris en c\u0153ur : \u00ab\u00a0alors, quand est-ce que tu en pr\u00e9pares ?\u00a0\u00bb<\/p>\n\n\n\n<p>Cette fois, Nan m&rsquo;a accompagn\u00e9e en Suisse. Je me suis donc empress\u00e9e de le laisser s&rsquo;occuper de la r\u00e9alisation du plat et me suis content\u00e9e d&rsquo;espionner et de prendre des notes. C&rsquo;est lui qui m&rsquo;a pr\u00e9par\u00e9 cette recette en premier lieu, c&rsquo;est \u00e0 lui que devait l\u00e9gitimement revenir la gloire ! Tu peux m\u00eame y ajouter un peu de piments si tu le souhaites.<br>Je n&rsquo;avais pas post\u00e9 cette recette avant car je ne cuisine pas souvent le <strong>poisson au tamarin<\/strong>. Manger du poisson m&rsquo;est de plus en plus difficile. Le fait de voir des merveilles sous l&rsquo;eau \u00e0 longueur de journ\u00e9es fait que je ne souhaite pas vraiment les retrouver, le soir, dans mon assiette. J&rsquo;aime le go\u00fbt du poisson et c&rsquo;est excellent pour la sant\u00e9 mais mon cerveau s&rsquo;obstine \u00e0 faire opposition lorsque je vais au march\u00e9. Chose \u00e9tonnante, une fois en Suisse, mon cerveau \u00e9tait \u00e0 nouveau tout consentant et j&rsquo;ai mang\u00e9 plus de poisson en un mois (poissons du lac) qu&rsquo;en une ann\u00e9e ici. <br>Est-ce parce que je sais que la p\u00eache au lac est contr\u00f4l\u00e9e ? Ou est-ce parce que je ne plonge pas dans le lac ? Il faut juste choisir un poisson qui a une chair ferme. Choisis en fonction des poissons que tu peux trouver dans ta r\u00e9gion et qui figurent sur la liste des esp\u00e8ces qui ne sont pas d\u00e9conseill\u00e9es. <br>Pour voir cette liste: <a href=\"http:\/\/www.greenpeace.org\/switzerland\/Global\/switzerland\/fr\/publications\/oceans\/2010_Oceans_Brochure_GuidePoisson.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">liste des poissons recommand\u00e9s et d\u00e9conseill\u00e9s<\/a>.<\/p>\n\n\n\n<p>Pour cette recette, il te faut du tamarin. On trouve du tamarin sous forme de jus concentr\u00e9 ou de bloc de fruits compress\u00e9s. C&rsquo;est ce dernier que je te recommande. Celle que j&rsquo;ai trouv\u00e9e en Suisse avait un gout beaucoup plus discret. Cela d\u00e9pend sans do\u00fbte de la marque. Attention, il ne faut pas la confondre avec la sauce soja sucr\u00e9e (trop sucr\u00e9e pour ce plat). <br>Ici, la sauce soja fonc\u00e9e a un fort go\u00fbt qui rappelle la r\u00e9glisse. Sa couleur est \u00e9galement beaucoup tr\u00e8s noire. Les quantit\u00e9s indiqu\u00e9es de sauce soya fonc\u00e9e sont en fonction de celle que j&rsquo;ai trouv\u00e9e en Suisse. Dans le doute, r\u00e9duis un peu la quantit\u00e9, Il vaut mieux un gout un peu plus discret que trop fort. Pour de la <strong>sauce originaire de Tha\u00eflande<\/strong>, je n&rsquo;utiliserai qu&rsquo;une cuill\u00e8re \u00e0 caf\u00e9 au lieu d&rsquo;une cuill\u00e8re \u00e0 soupe.<\/p>\n\n\n\n<p>La m\u00eame remarque est valable pour le sucre. En fonction du sucre que tu utilises, le pouvoir sucrant diff\u00e8re. Cette sauce ne doit pas \u00eatre acide. Ajoute un peu de sucre en cours de cuisson si l&rsquo;acidit\u00e9 est trop pr\u00e9sente.<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-8021\" class=\"wprm-recipe-container\"
