Nord, sud, est, ouest, ville ou campagne\u2026 on mange de la salade de papaye verte \u00e0 tous les coins de rue. <br>G\u00e9n\u00e9ralement, on l\u2019ach\u00e8te au stand de street food, on la mange sur place ou on la fait mettre dans un petit sachet pour l\u2019emporter. Dans la ville o\u00f9 j\u2019habite, il y a une multitude de dames qui trimballent leur stand de salade de papaye verte avec leur moto \u00e0 3 roues. En plus de cela, de nombreux \u00ab restaurants \u00bb ou stands de march\u00e9 en proposent \u00e9galement. Chacun la pr\u00e9pare de mani\u00e8re un peu diff\u00e9rente, le go\u00fbt est plus ou moins bon suivant la provenance, la seule constante est la pr\u00e9sence d\u2019une m\u00e9ga quantit\u00e9 de piments !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Piquant ou pas ? <\/h3>\n\n\n\n<p>Ici, la <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-papaye-verte-frite\/\">salade de papaye verte<\/a> arrache du genre que tu peux plus respirer, que ton nez coule tout ce qu\u2019il peut et que tes yeux ne cessent de pleurer. Avec le temps, on s&rsquo;habitue au piment mais au d\u00e9but, je la commandais \u00ab pas piquante \u00bb et je n\u2019arrivais pas \u00e0 manger plus de 3 cuiller\u00e9es de ma salade. <br>Il m\u2019a fallu du temps pour comprendre que \u00ab pas piquant \u00bb se traduit, dans la t\u00eate d\u2019une marchande de salade de papaye verte, par \u00ab je te mets 1 ou 2 piments autrement ma salade n\u2019a pas de go\u00fbt \u00bb. Du coup, il faut commander \u00ab\u00a0sans piment\u00a0\u00bb. Et m\u00eame comme \u00e7a, la salade arrache bien car elle lave son mortier entre une salade et la suivante. Si vraiment tu ne supportes pas ce qui est piquant, il faut insister pour que le mortier soit lav\u00e9 avant qu\u2019elle commence \u00e0 pr\u00e9parer ta salade. Et l\u00e0, cela devient comique car la dame va secouer la t\u00eate durant toute la pr\u00e9paration en r\u00e9p\u00e9tant \u00ab mai pet mai aroy \u00bb (pas piquant, pas bon !) et c\u2019est limite si elle refuse de te la servir \u00e0 manger.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Comment pr\u00e9parer la salade de papaye verte ? <\/h3>\n\n\n\n<p>\ud83c\udf36\ufe0f La salade se pr\u00e9pare dans un mortier. On utilise un pilon pour \u00e9craser les condiments ainsi que la papaye verte. Le fait d\u2019\u00e9craser la papaye la rend plus tendre. On peut pr\u00e9parer la salade sans le pilon mais le r\u00e9sultat final est nettement moins bon. Le but n&rsquo;est pas de r\u00e9duire les aliments en pur\u00e9e mais juste de les \u00e9craser un peu, il n&rsquo;est donc pas n\u00e9cessaire de taper fort. La sauce se pr\u00e9pare avec tamarin ou pas, avec sirop de sucre ou pas. On peut utiliser des cacahu\u00e8tes ou des noix de cajou. De mon c\u00f4t\u00e9, je mets 3-4 piments-oiseau dans ma salade. <\/p>\n\n\n\n<p>\ud83c\udf36\ufe0f La salade de papaye verte est parfaite servie en entr\u00e9e ou pour accompagner une viande grill\u00e9e. Tu la tiens dans une main et, avec un grand couteau dans l&rsquo;autre main, tu tapes sur la papaye pour la fendre dans la longueur.
