Toutefois, il y avait, dans notre petite ville de 3000 habitants, une \u00e9pici\u00e8re un peu excentrique qui vendait, \u00e0 prix d&rsquo;or, des produits du monde entier.<br>Quand la folie me prenait, j&rsquo;achetais de quoi pr\u00e9parer une montagne de rouleaux de printemps. Je passais mon samedi entier \u00e0 rouler, et en remplissait le cong\u00e9lateur. Je me rappelle que c&rsquo;\u00e9tait long et fastidieux et que la cuisine se retrouvait dans un \u00e9tat lamentable apr\u00e8s mon passage. Quant \u00e0 la cuisson, c&rsquo;\u00e9tait un vrai challenge : la p\u00e2te pour fabriquer ces rouleaux \u00e9tait fragile. Ce sont g\u00e9n\u00e9ralement ces galettes qui sont utilis\u00e9es dans les restaurants chinois ou vietnamiens pour la fabrication des rouleaux de printemps. Elles sont assez difficiles \u00e0 utiliser car il faut les humidifier avant l&#8217;emploi. Une fois humides, elles sont fragiles. Le fait qu&rsquo;elles soient humide rend leur friture difficile et les rouleaux peuvent \u00e9clater lors de la cuisson. Le r\u00e9sultat final donne des nems assez gras. Pour ma part, je n&rsquo;utilise ces galettes que pour les rouleaux d&rsquo;\u00e9t\u00e9 (qui sont crus).<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img decoding=\"async\" src=\"http:\/\/aupaysdespiments.com\/wp-content\/uploads\/2014\/03\/pate1-300x274.jpg\" alt=\"p\u00e2te \u00e0 rouleau de printemps tha\u00efs\" class=\"wp-image-2238\"\/><\/figure>\n<\/div>\n\n\n\n\n\n\n<p>&#8211; La <strong>p\u00e2te \u00e0 rouleaux de printemps surgel\u00e9e<\/strong>. C&rsquo;est uniquement cette p\u00e2te qui est utilis\u00e9e en Tha\u00eflande. Elle ressemble \u00e0 des <strong>feuilles de brick<\/strong>. Elle est facile \u00e0 utiliser et donne des rouleaux super croustillants et peu gras. Etant donn\u00e9 que cette p\u00e2te est fine, il faut tout de m\u00eame faire attention de ne pas la d\u00e9chirer lors de la pr\u00e9paration des rouleaux. Cette p\u00e2te \u00e0 tendance \u00e0 s\u00e9cher \u00e0 l&rsquo;air libre. Pour ma part, je les pr\u00e9f\u00e8re lorsqu&rsquo;ils sont pr\u00e9par\u00e9s avec des l\u00e9gumes uniquement. Je les aime en version miniature, faciles \u00e0 engloutir et finalement je n&rsquo;aime pas lorsqu&rsquo;ils contiennent du gingembre ou des champignons car le go\u00fbt de ces 2 aliments couvre le
