Ici, on ajoute parfois des gla\u00e7ons dans le lait de coco au moment du service, pour que soit bien frais.  Mais on peut tr\u00e8s bien supprimer le lait de coco et servir la <strong>courge caram\u00e9lis\u00e9e<\/strong> ti\u00e8de sur une boule de glace \u00ab\u00a0fleur de lait\u00a0\u00bb ou coco, c&rsquo;est magique aussi. <\/p>\n\n\n\n<p>Depuis longtemps d\u00e9j\u00e0, je voulais pr\u00e9parer ce dessert. Le probl\u00e8me, comme toujours, a \u00e9t\u00e9 d&rsquo;obtenir la recette. Une recette tha\u00efe est \u00e0 l&rsquo;image de la vie quotidienne dans mon bled : floue et fluctuante. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Le secret est dans la recette<\/h3>\n\n\n\n<p>La technique qui marche le mieux, c&rsquo;est l&rsquo;espionnage : il s&rsquo;agit de rester dans la cuisine au moment de la pr\u00e9paration du plat et de prendre note de ce qui est fait. Du coup, pas besoin de poser de question et pas besoin de s&rsquo;\u00e9nerver. Mais je te laisse imaginer comment \u00e7a se passe pour une recette un peu plus \u00e9labor\u00e9e\u00a0!<br>J&rsquo;ai fait des essais et, souvent, ma courge \u00e9tait trop cuite et mon caramel trop liquide. C&rsquo;est alors que Nan m&rsquo;a dit :<br>\u00ab\u00a0<em>Ben, c&rsquo;est normal, tu ne les trempes pas dans le produit avant de les cuire.<\/em> \u00ab\u00a0<br>\u00ab\u00a0<em>Quoi ? Quel produit ? De quoi tu parles ? \u00c7a fait des semaines que je pose des questions sur <a href=\"https:\/\/www.aupaysdespiments.com\/en\/dessert-thai-a-la-courge\/\" target=\"_blank\" rel=\"noopener\">ce dessert<\/a> et personne m&rsquo;en a parl\u00e9, c&rsquo;est quoi ce binz?<\/em> \u00ab\u00a0<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">C&rsquo;est quoi cette histoire de chaux alimentaire ?<\/h3>\n\n\n\n<p>De mani\u00e8re traditionnelle, la courge est tremp\u00e9e durant une demi-heure dans une solution de chaux alimentaire (nom tha\u00ef : <em>Boun<\/em> or <em>nahm boun<\/em>) qui en raffermit la chair. La courge peut donc cuire longtemps dans le caramel et rester ferme. J&rsquo;ai eu des informations contradictoires et peu claires \u00e0 ce sujet. J&rsquo;ai donc renonc\u00e9 \u00e0 en utiliser, et je me suis dit que tu n&rsquo;arriverais certainement pas \u00e0 trouver cela en Europe.<br>Nan m&rsquo;a expliqu\u00e9 qu&rsquo;il s&rsquo;agit d&rsquo;une poudre \u00e0 base de coquillages broy\u00e9s qui sert \u00e9galement de d\u00e9sinfectant alimentaire (il semblerait que cela tue les mauvaises bact\u00e9ries). Quant \u00e0 mes coll\u00e8gues, elles m&rsquo;ont montr\u00e9 des photos d&rsquo;un fruit de palmier et m&rsquo;on fait comprendre que le produit en question est un d\u00e9riv\u00e9 de ce fruit. Bref\u00a0! D\u00e8s que le m\u00e9lange bout et que le sucre est bien fondu, baisse le feu et ajoute les morceaux de courge, c\u00f4t\u00e9 peau contre le fond de la casserole.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Lorsque la peau de la courge est tendre, retourne les morceaux et laisse cuire encore un peu. Il faut \u00eatre bien vigilant lors de la cuisson.
