Et si t&rsquo;es super gourmand, te g\u00eane pas, et pr\u00e9parer le maxi <strong>pad thai poulet crevettes et l\u00e9gumes<\/strong> !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Des <strong>pad thai<\/strong>, j&rsquo;en ai mang\u00e9 des centaines<\/h3>\n\n\n\n<p>Quand tu es Europ\u00e9enne et que tu aimes bien manger plein de choses vari\u00e9es, ce n&rsquo;est pas facile de vivre sur une petite \u00eele perdue sans supermarch\u00e9 ni resto international. Cela implique de te nourrir de riz \u00e0 tous les repas. Je te jure qu&rsquo;apr\u00e8s 15 jours \u00e0 ce r\u00e9gime, tu r\u00eaves d&rsquo;une pur\u00e9e de pommes de terre, d&rsquo;un sandwich \u00e0 n&rsquo;importe quoi ou de p\u00e2tes, m\u00eame sans sauce. Sauf que bien s\u00fbr, sur mon \u00eele, rien de tout cela ! <br>Ce qui se rapproche le plus d&rsquo;un plat de p\u00e2tes et qui ne contient pas de grains de riz, c&rsquo;est le pad thai. Il n&rsquo;est pas aussi courant que ce qu&rsquo;on imagine dans les restaurants locaux du sud de la Tha\u00eflande. On trouve par contre de nombreux plats de nouilles saut\u00e9es tr\u00e8s appr\u00e9ci\u00e9s des locaux comme le <a href=\"https:\/\/youtu.be\/aGCtFNmfe70\" target=\"_blank\" rel=\"noopener\">pad see ew<\/a> ou le pad ki mao, entre autres.<br>Pour te livrer cette recette, j&rsquo;ai fait des recherches : j&rsquo;ai potass\u00e9 mes livres de cuisine tha\u00efe, j&rsquo;ai demand\u00e9 \u00e0 Google de me sortir les vraies recettes traditionnelles et j&rsquo;ai questionn\u00e9 mes voisins\u2026 eh ben \u2026 j&rsquo;ai pas \u00e9t\u00e9 tr\u00e8s aid\u00e9e : <strong>il y a autant de recettes que de cuisiniers !<\/strong><br>La v\u00e9ritable recette authentique est une chim\u00e8re. <br>C&rsquo;est vrai, qu&rsquo;ici, dans les restaurants, je n&rsquo;ai jamais mang\u00e9 2 fois le m\u00eame pad thai : les go\u00fbts varient beaucoup et les ingr\u00e9dients \u00e9galement. <br>Du coup, j&rsquo;ai fait beaucoup d&rsquo;essais pour pouvoir fi\u00e8rement te pr\u00e9senter ce qui est pour moi la meilleure recette de pad thai, celle comme j&rsquo;aime le manger :<br>&#8211; avec <strong>du tofu<\/strong> et <strong>des pousses de soja<\/strong>,<br>&#8211; en utilisant <strong>de l&rsquo;oignon vert<\/strong> plut\u00f4t que de la ciboule chinoise (ail odorant)<br>&#8211; pr\u00e9par\u00e9 avec<strong> des l\u00e9gumes<\/strong> : carottes et chou<br>&#8211; avec <strong>une sauce tamarin pas trop sucr\u00e9e<\/strong><br>&#8211; si <strong>les nouilles juste cuites<\/strong> et pas p\u00e2teuses. <br>Libre \u00e0 toi d&rsquo;ajouter ou de retirer ce que tu veux !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Les nouilles de riz pour le pad thai :&nbsp;<\/strong><\/h3>\n\n\n\n<p>Il est important de choisir <strong>des nouilles de riz plates de 2-3 mm<\/strong> de largeur. Les nouilles rondes ne conviennent pas pour ce plat. Ces nouilles plates se trouvent fra\u00eeches (au march\u00e9 de mon village) ou s\u00e9ch\u00e9es. J&rsquo;imagine qu&rsquo;en Europe tu ne trouves pas les <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-nouilles-de-riz-la-sauce-tamarin-cacahuetes\/\" target=\"_blank\" rel=\"noopener\">nouilles fra\u00eeches<\/a>. Ici, c&rsquo;est les s\u00e8ches que je ne trouve pas.<br>Cut the petals into <strong>r\u00e9hydrater les nouilles s\u00e9ch\u00e9es en les trempant dans de l&rsquo;eau FROIDE<\/strong> durant 15 minutes environ. Quoi qu&rsquo;il soit expliqu\u00e9 sur l&#8217;emballage des nouilles, ne le lis pas. C&rsquo;est important de ne pas pr\u00e9cuire ou \u00e9bouillanter les nouilles avant l&rsquo;usage, autrement tu auras un pad thai avec des nouilles toutes visqueuses. Tout autre tofu ferme convient \u00e9galement. Cela comporte les noyaux du fruit \u00e9galement. Pour pouvoir l&rsquo;utiliser, on ajoute un peu d&rsquo;eau chaude sur la pulpe et on laisse reposer quelques minutes. On m\u00e9lange bien et on r\u00e9cup\u00e8re la pur\u00e9e, on laisse les noyaux de c\u00f4t\u00e9. Tu peux te r\u00e9f\u00e9rer \u00e0 ce post <strong><a href=\"https:\/\/www.aupaysdespiments.com\/en\/comment-preparer-du-concentre-de-tamarin-maison\/\" target=\"_blank\" rel=\"noreferrer noopener\">pour la pr\u00e9paration du tamarin pour la sauce. <\/a><\/strong><br>Il existe aussi du concentr\u00e9 de tamarin, fais attention de ne pas en mettre trop si tu l&rsquo;utilises. En fin de cuisson, <strong>la sauce est totalement absorb\u00e9e par les nouilles de riz<\/strong>.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ma combine pour se simplifier la vie<\/h4>\n\n\n\n<p>La chose important sur laquelle il ne faut pas se louper, c&rsquo;est la cuisson des nouilles. <strong>Il n&rsquo;y a rien de plus mauvais qu&rsquo;un pad thai avec des nouilles trop cuites <\/strong>ou cuites dans trop de liquide. Ici, tout est cuisin\u00e9 avec un wok. On fait cuire les nouilles, on ajoute la viande ou les crevettes puis les \u0153ufs et finalement les l\u00e9gumes. <br><span style=\"text-decoration: underline;\">Il faut \u00eatre un as de la cuisson au wok pour ma\u00eetriser les temps de cuissons pour que tous les aliments soient juste assez cuits mais pas trop.<\/span>&nbsp;<br>C&rsquo;est super stressant. On a besoin d&rsquo;une gigantesque po\u00eale pour ne pas avoir tout qui sort de tous les c\u00f4t\u00e9s. Si on cuisine pour plusieurs, il faut \u00eatre super muscl\u00e9 pour tout remuer. Autant te dire que je ne suis pas un as du wok et que je pr\u00e9f\u00e8re largement ma po\u00eale anti-ad\u00e9sive pour ce type de cuisson car on utilise moins d&rsquo;huile.<br>J&rsquo;ai donc d\u00e9velopp\u00e9 <span style=\"text-decoration: underline;\">ma technique pour les nouilles saut\u00e9es et le riz frit :<\/span> je cuis tous les \u00e9l\u00e9ments s\u00e9par\u00e9ment, les uns apr\u00e8s les autres, tranquille p\u00e9p\u00e8re. En fin de cuisson, je regroupe le tout dans la po\u00eale et m\u00e9lange bien. Cela d\u00e9clenche g\u00e9n\u00e9ralement une horde de commentaires de la part de Nan mais il a reconnu que le go\u00fbt du plat, au final, n&rsquo;est pas diff\u00e9rent de celui de la cuisson tout-en-un. Pour ce plat, je te conseille de faire comme moi et de cuire les ingr\u00e9dients s\u00e9par\u00e9ment.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">D&rsquo;autres recettes de nouilles<\/h3>\n\n\n\n<div
