{"id":2575,"date":"2014-07-05T05:54:40","date_gmt":"2014-07-05T05:54:40","guid":{"rendered":"http:\/\/aupaysdespiments.com\/?p=2575"},"modified":"2025-01-02T12:30:26","modified_gmt":"2025-01-02T11:30:26","slug":"omelette-au-crabe","status":"publish","type":"post","link":"https:\/\/www.aupaysdespiments.com\/en\/omelette-au-crabe\/","title":{"rendered":"Omelette au crabe"},"content":{"rendered":"<p>Attention les yeux, aujourd&rsquo;hui, on s&rsquo;attaque \u00e0 un monument de la gastronomie tha\u00efe: <strong><span style=\"color: #008000;\">l&rsquo;omelette.<br><\/span><\/strong><span style=\"color: #008000;\"><span style=\"color: #000000;\">Et pas n&rsquo;importe laquelle : l&rsquo;<strong>omelette au crabe <\/strong>! <\/span><\/span><\/p>\n\n\n\n<p>Je t&rsquo;entends ricaner \u2026 mais je te jure qu&rsquo;on ne plaisante pas avec l&rsquo;omelette. Il s&rsquo;agit d&rsquo;un \u00e9l\u00e9ment de base de l&rsquo;alimentation locale. Presque chaque repas comporte une omelette. Dans le sud de la Tha\u00eflande, un repas classique est compos\u00e9 de BEAUCOUP de riz, d&rsquo;un peu de poulet, de poisson frais ou de poisson s\u00e9ch\u00e9-sal\u00e9, de l\u00e9gumes crus \u00e0 grignoter ET d&rsquo;une omelette. Un repas sans omelette, n&rsquo;est pas un vrai repas.<br>Il existe des tas de variantes d&rsquo;omelette : avec des l\u00e9gumes, avec des crevettes hach\u00e9es ou de la chair de crabe, avec du porc hach\u00e9, avec ou sans \u00e9chalotes, etc. Par contre, il existe une seule et unique mani\u00e8re de la pr\u00e9parer :<span style=\"text-decoration: underline;\"> <strong>il faut la faire frire dans de l&rsquo;huile tr\u00e8s chaude.<\/strong><\/span><br>Pour cela, tu peux oublier&nbsp;toute notion d&rsquo;omelette comme on la pr\u00e9pare en Europe. Si c&rsquo;est baveux ou moelleux, personne n&rsquo;en veut. L&rsquo;omelette doit \u00eatre tr\u00e8s cuite, croustillante \u00e0 l&rsquo;ext\u00e9rieur et tendre \u00e0 l&rsquo;int\u00e9rieur. Je dois avouer que l&rsquo;omelette tha\u00ef-style est excellente et que j&rsquo;en mange volontiers.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">THE omelette ! <\/h3>\n\n\n\n<p>Pour te dire \u00e0 quel point l&rsquo;omelette est importante : je n&rsquo;ai pas le droit de la pr\u00e9parer. C&rsquo;est le travail de Nan&nbsp;! Certains ajoutent m\u00eame un peu de poudre d&rsquo;assaisonnement (de type bouillon en poudre) souvent utilis\u00e9e dans la cuisine tha\u00efe. <br>\ud83c\udf36\ufe0f On la cuit dans un wok, une po\u00eale creuse ou une petite casserole, dans beaucoup d&rsquo;huile TR\u00c8S CHAUDE : en bref, <span style=\"text-decoration: underline;\"><strong>it needs to be deep-fried.<\/strong><\/span><br>\ud83c\udf36\ufe0f Il est conseill\u00e9 d&rsquo;ajouter quelques gouttes de jus de citron aux oeufs battus. Cela aide \u00e0 rendre l&rsquo;omelette croustillante. (Nan ne le fait pas \ud83e\udd23)<br>\ud83c\udf36\ufe0f Elle se<span style=\"text-decoration: underline;\"> <strong>mange sans attendre<\/strong><\/span>. Autrement, elle ramollit et devient nettement moins bonne.<br>\ud83c\udf36\ufe0f <span style=\"text-decoration: underline;\">On y ajoute <strong>veggies that don't render any water.<\/strong><\/span> : &nbsp;les tomates sont \u00e0 d\u00e9conseiller.
