On peut la pr\u00e9parer avec du b\u0153uf (laab nua), du porc (laab moo), du poulet (<strong>laab gai<\/strong>), du canard, des crevettes, etc. Elle est g\u00e9n\u00e9ralement mang\u00e9e ti\u00e8de ou froide, avec du <a title=\"Sticky rice \u2013 Riz gluant tha\u00ef\" href=\"https:\/\/www.aupaysdespiments.com\/en\/sticky-rice-riz-gluant-thai\/\" target=\"_blank\" rel=\"noopener\">riz gluant <\/a><em>(kaow niao).<\/em> On la sert accompagn\u00e9e de haricots crus, de concombre, de chou blanc cru et d&rsquo;herbes aromatiques. Plat tr\u00e8s parfum\u00e9 et acidul\u00e9, il est parfait pour l&rsquo;\u00e9t\u00e9. Si tu commandes cette salade en Tha\u00eflande, fais bien attention car elle est souvent tr\u00e8s piment\u00e9e.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">&nbsp;Larb, laab, lap, laap : un plat, diff\u00e9rentes transcriptions<\/h4>\n\n\n\n<p>Le nom de ce plat&nbsp;varie car, en Tha\u00ef, on ne prononce presque pas les consonnes finales. On avale les sons. Il est donc difficile de d\u00e9finir avec pr\u00e9cision si on utilise plut\u00f4t le son \u00ab\u00a0p\u00a0\u00bb ou \u00ab\u00a0b\u00a0\u00bb \u00e0 la fin du mot. <em>Larb<\/em> serait plut\u00f4t la prononciation anglophone et <em>laab<\/em> la version francophone. C&rsquo;est assez amusant, en Tha\u00eflande, il y a diff\u00e9rentes mani\u00e8res d&rsquo;\u00e9crire les mots avec notre alphabet. Dans ma r\u00e9gion, les panneaux de signalisation des localit\u00e9s sont \u00e9crits en tha\u00ef et en anglais. Le nom d&rsquo;un m\u00eame village n&rsquo;est pas \u00e9crit de la m\u00eame mani\u00e8re d&rsquo;un panneau \u00e0 l&rsquo;autre. On voit diff\u00e9rentes versions : Ban, Bhan, Bahn, juste pour ne citer qu&rsquo;un exemple.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Un plat tr\u00e8s piment\u00e9<\/h4>\n\n\n\n<p>Dans ma version de ce laab, il y a juste une l\u00e9g\u00e8re dose de piment, tu peux en mettre plus si tu aimes \u00e7a. Les laab servis dans les restaurants locaux sont trop forts pour moi, bien que j&rsquo;aime ce qui pique. Elle est cuite dans un jus, il n&rsquo;y a pas du tout d&rsquo;apport de mati\u00e8re grasse.<\/p>\n\n\n\n<p>Il y a plusieurs ingr\u00e9dients qui font de ce plat une r\u00e9ussite :<\/p>\n\n\n\n<p>&#8211;<strong> le galanga frais :<\/strong> il est imp\u00e9ratif et non-rempla\u00e7able par du gingembre. C&rsquo;est le galanga qui donne un go\u00fbt frais et parfum\u00e9 \u00e0 la viande.<\/p>\n\n\n\n<p>&#8211; <strong>la poudre de <a href=\"https:\/\/www.aupaysdespiments.com\/en\/comment-preparer-de-la-poudre-de-riz-gluant-grille\/\" target=\"_blank\" rel=\"noreferrer noopener\">riz gluant&nbsp;grill\u00e9<\/a> :<\/strong> si tu as du riz gluant, tu peux facilement pr\u00e9parer cette poudre. Si tu n&rsquo;en as pas, tu peux utiliser du riz tha\u00ef (riz parfum\u00e9) \u00e0 la place. Voici comment la pr\u00e9parer :<br>Il suffit de mettre 1 poign\u00e9e de riz (ou plus) dans une po\u00eale et de chauffer \u00e0 sec (sans huile) \u00e0 feu moyen. M\u00e9lange sans arr\u00eat jusqu&rsquo;\u00e0 ce que le riz ait une jolie couleur ambr\u00e9e. Si tu veux pas que tes voisins du dessous te d\u00e9testent, place un torchon sous la planche pour att\u00e9nuer le bruit.
