On le consomme tr\u00e8s (ou m\u00eame extr\u00eamement) piquant. C&rsquo;est sans doute pour cette raison qu&rsquo;il  tr\u00e8s rarement pr\u00e9sent sur les cartes des restaurants tha\u00efs \u00e0 l&rsquo;\u00e9tranger et m\u00e9connu des touristes. Il s&rsquo;agit d&rsquo;un <strong>curry sans lait de coco<\/strong> originaire du sud de la Tha\u00eflande. Comme tout ce qui vient du sud du pays, son go\u00fbt est intense et son pouvoir piment\u00e9 est bien sup\u00e9rieur \u00e0 tout autre curry. <br>Ce curry acidul\u00e9 au poisson a \u00e9t\u00e9 repris et adapt\u00e9 dans toutes les r\u00e9gions de la Tha\u00eflande. <strong>C&rsquo;est devenu un plat national aux innombrables variantes.<\/strong> Seules 2 constantes : <br>\ud83c\udf36 il n&rsquo;est jamais pr\u00e9par\u00e9 avec du lait de coco et <br>\ud83c\udf36 il est toujours plus piquant que ce que tout ce que tu peux imaginer. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Un plat souvent pr\u00e9sent sur les tables du sud du pays<\/h3>\n\n\n\n<p>Pour ma part, je me m\u00e9fie toujours lorsque je le vois chez des amis. J&rsquo;en go\u00fbte une mini cuill\u00e8re pour savoir si j&rsquo;arriverai \u00e0 le manger ou non.  G\u00e9n\u00e9ralement, je finis avec le nez qui coule et les larmes aux yeux. J&rsquo;aime bien son go\u00fbt, mais je ne le commande jamais au restaurant pour les raisons pr\u00e9-cit\u00e9es. Du coup, la seule solution, c&rsquo;est de le cuisiner moi-m\u00eame. J&rsquo;ai bien souvent demand\u00e9 \u00e0 Nan ou \u00e0 mes amis de m&rsquo;expliquer comment le pr\u00e9parer mais tout le monde me dit que ce n&rsquo;est pas possible de faire&nbsp;ce curry sans trop de piments. Ils refusent de m&rsquo;aider\u2026 C&rsquo;est magique !<\/p>\n\n\n\n<p>Voil\u00e0 comment j&rsquo;ai attendu de longues ann\u00e9es avant de trouver ma prof de cuisine priv\u00e9e. Comme pour les <a href=\"https:\/\/www.aupaysdespiments.com\/en\/vermicelles-oranges-nouilles-sautees\/\" target=\"_blank\" rel=\"noopener\">nouilles oranges<\/a>, j&rsquo;ai propos\u00e9 un \u00e9change : <em>ah ? tu veux que je te montre comment pr\u00e9parer des choux \u00e0 la cr\u00e8me ? Pas de probl\u00e8me\u2026 mais uniquement si tu me montres comment pr\u00e9parer un <strong>curry acidul\u00e9 au poisson<\/strong>.<\/em> <br>La s\u0153ur de Nan a relev\u00e9 le d\u00e9fi. Une des variantes de ce curry est pr\u00e9par\u00e9e avec <strong>des pousses de bambou en saumure<\/strong>. Ces pousses de bambou, une fois cuites, d\u00e9gagent une odeur identique \u00e0 celle du pipi de chat. Je te jure que je n&rsquo;exag\u00e8re pas. Un jour donc, de bon matin, j&rsquo;entre dans la cuisine commune de notre centre de plong\u00e9e et je sens cette odeur qui me retourne l&rsquo;estomac. Je suis en rage contre notre chat. Je le chasse \u00e0 coups de balai et je fais le tour de la cuisine en reniflant partout pour trouver l&rsquo;endroit o\u00f9 ce maudit chat a \u2026 quand soudain, mon odorat est attir\u00e9 vers la table, par le plat de curry qui s&rsquo;y trouve ! Oh horreur ! Comment peut-on manger un truc pareil&nbsp;? J&rsquo;imagine que c&rsquo;est un peu comme si je pla\u00e7ais un \u00e9poisses bien fait sous le nez de Nan&nbsp;!<br>Bref, j&rsquo;ai film\u00e9 le plat de Gaeng Som pour \u00e9viter d&rsquo;avantage de pollution olfactive et je me suis promis de ne jamais y go\u00fbter.<\/p>\n\n\n\n<p>C&rsquo;est en discutant avec mes amis tha\u00efs et en plaisantant \u00e0 propos de l&rsquo;odeur de leur nourriture que j&rsquo;ai compris que ce curry peut \u00eatre pr\u00e9par\u00e9 de nombreuses mani\u00e8res. La version que je te propose est d\u00e9licieuse. class=\"wp-block-heading\">Quelques mots sur les ingr\u00e9dients<\/h3>\n\n\n\n<p>\ud83c\udf36 Ce plat est cuisin\u00e9 avec du poisson ou des fruits de mer. On peut y ajouter des l\u00e9gumes en tous genre. Dans ma r\u00e9gion, il est souvent pr\u00e9par\u00e9 avec :<br>&#8211; du chou-fleur ou du melon d&rsquo;eau<br>&#8211; de la papaye verte, ou de jeunes pousses de bananier,<br>&#8211; des pousses de bambou fra\u00eeches ou en saumure, <br>&#8211; ou alors des morceaux d&rsquo;ananas pas m\u00fbr. <br>Cette liste n&rsquo;est pas exhaustive. Chaque fois que je vais au march\u00e9 et que je d\u00e9couvre une fleur, un fruit ou un l\u00e9gume que je ne connais pas, la marchande me dit que c&rsquo;est d\u00e9licieux dans un gaeng som \ud83d\ude06. Je pense que ce curry est un super moyen d&rsquo;utiliser les <strong>courgettes<\/strong> que tu as dans ton jardin et dont tu ne sais plus quoi faire.<br><br>\ud83c\udf36  Le c\u00f4t\u00e9 acidul\u00e9 du curry vient du<strong> jus de citron vert<\/strong> qu&rsquo;on y ajoute. On peut remplacer ce jus de citron par du <strong>tamarin<\/strong> frais ou en concentr\u00e9. On peut aussi utiliser <strong>des fruits s\u00e9ch\u00e9s Som Khek<\/strong>. L&rsquo;ananas apporte \u00e9galement un peu d&rsquo;acidit\u00e9 lorsqu&rsquo;on l&rsquo;utilise. Certaines personnes ajoutent du sucre dans le curry pour balancer l&rsquo;acidit\u00e9 mais dans ma r\u00e9gion, cela ne se fait pas. Libre \u00e0 toi d&rsquo;ajouter du sucre si tu le souhaites.<br><br>\ud83c\udf36  <span style=\"text-decoration: underline;\">Ce curry est toujours pr\u00e9par\u00e9 avec des poissons entiers,<\/span> vid\u00e9s et coup\u00e9s en darnes . <strong>La t\u00eate du poisson est cuite dans le curry, <\/strong>le foie et les oeufs \u00e9galement. Je n&rsquo;ai jamais vu de Gaeng Som pr\u00e9par\u00e9 avec des filets de poisson. Comme je re\u00e7ois toujours beaucoup de poisson frais entiers, je conserve les t\u00eates et les parures au cong\u00e9lateur lorsque je pr\u00e9l\u00e8ve les filets. Je les ressors lorsque je pr\u00e9pare un fumet de poisson pour le <em>gaeng som <\/em>ou le <a href=\"https:\/\/www.aupaysdespiments.com\/en\/tom-yam-aux-crevettes\/\"><em>tom yam<\/em><\/a>. Je fais de m\u00eame avec les carapaces et t\u00eates de crevettes. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La p\u00e2te de curry pour le gaeng som<\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>\ud83c\udf36 Je te propose ici une recette adapt\u00e9e \u00e0 mes papilles, piquante juste comme il faut. Habitu\u00e9e au piment, je mange de plus en plus piquant avec les ann\u00e9es. Il n&rsquo;est pas rempla\u00e7able par le curcuma en poudre.
