Le Vietnam est proche de la Tha\u00eflande, mais je n&rsquo;avais jamais eu l&rsquo;occasion de m&rsquo;y rendre. Notre voyage a \u00e9t\u00e9 bref, 9 jours au total. 9 jours intenses en \u00e9motions, en couleurs et en go\u00fbts. Si tu veux conna\u00eetre la recette des<strong> banh khot<\/strong>, continue la lecture.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Notre s\u00e9jour&nbsp; Ho Chi Minh City<\/h2>\n\n\n\n<p>Nous sommes arriv\u00e9s \u00e0 Ho Chi Minh City depuis Bangkok. En Asie, on peut voyager \u00e0 bas prix avec Air Asia. C&rsquo;est une compagnie d&rsquo;aviation low cost plut\u00f4t efficace et bien organis\u00e9e. Nous avions r\u00e9serv\u00e9 notre h\u00f4tel avec agoda.com qui est un des sites les plus utilis\u00e9s pour le booking online en Asie. <a title=\"lan lan hotel\" href=\"http:\/\/lanlanhotel.com.vn\/lanlan2\/\" target=\"_blank\" rel=\"noopener\">H\u00f4tel de classe moyenne \u00e0 prix raisonnable<\/a>, incroyablement bien situ\u00e9 au coeur du district 1, chambres ultra propres confortables, &nbsp;personnel poli et serviable. On peut dire qu&rsquo;on est bien tomb\u00e9.<\/p>\n\n\n\n<p>Avant notre d\u00e9part, nous avions \u00e9galement r\u00e9serv\u00e9 une journ\u00e9e compl\u00e8te d&rsquo;activit\u00e9s avec <a title=\"HCM cooking\" href=\"http:\/\/hochiminhcookingclass.com\" target=\"_blank\" rel=\"noopener\">HCM cooking class.<\/a> Ryan, avec qui j&rsquo;ai fait ce voyage, voulait absolument visiter les tunnels de Cu Chi. Quand \u00e0 moi, je tenais imp\u00e9rativement \u00e0 participer \u00e0 un cours de cuisine. HCM coking class a \u00e9t\u00e9 le parfait compromis. Ils proposent des journ\u00e9es compl\u00e8tes avec guide priv\u00e9. Il y a plusieurs programmes \u00e0 choix dont un qui offre un cours de cuisine le matin et une visite des tunnels dans l&rsquo;apr\u00e8s-midi.<br>J&rsquo;ai d\u00e9j\u00e0 suivi des cours de cuisine en Tha\u00eflande et j&rsquo;ai \u00e9t\u00e9 d\u00e9\u00e7ue des prestations. J&rsquo;\u00e9tais donc assez m\u00e9fiante et j&rsquo;ai fait beaucoup de recherches sur le net avant de r\u00e9server. Je ne voulais pas de cours avec un groupe nombreux. Pas non plus de cours qui se contente de d\u00e9montrer sans qu&rsquo;on puisse mettre la main \u00e0 la p\u00e2te. J&rsquo;ai donc contact\u00e9 HCM cooking class et j&rsquo;ai demand\u00e9 un cours priv\u00e9, une visite priv\u00e9e et un menu sur mesure. J&rsquo;ai re\u00e7u une r\u00e9ponse \u00e0 mon email le jour m\u00eame, tout mes d\u00e9sirs pouvaient \u00eatre exauc\u00e9s. Surpris&nbsp;mais contents, nous avons embarqu\u00e9 pour une heure de route. L&rsquo;\u00e9cole de cuisine se trouve dans la campagne, \u00e0 l&rsquo;ext\u00e9rieur de Sa\u00efgon. Il est dr\u00f4le, relaxe, sympathique et tr\u00e8s int\u00e9ressant. Nous visitons les plantations d&rsquo;herbes aromatiques et de l\u00e9gumes. Aucun changement, aucune erreur, aucune excuse, \u2026 je suis presque en \u00e9tat de choc tellement j&rsquo;en crois pas mes yeux ! Pour la petite histoire, lorsque j&rsquo;ai choisi le menu, j&rsquo;ai s\u00e9lection\u00e9 \u00ab\u00a0crab vegetable salad\u00a0\u00bb en pensant que ce serait une salade de crabe et de l\u00e9gumes \u2026. sauf que \u00ab\u00a0crab vegetable\u00a0\u00bb, c&rsquo;est le nom du l\u00e9gume lui-m\u00eame h\u00e9 h\u00e9 h\u00e9 h\u00e9. Il s&rsquo;agit d&rsquo;une herbe qui pousse de mani\u00e8re sauvage en bordure des champs de riz, son nom est <em>Peperomia&nbsp;pellucide, <\/em>on utilise ses feuilles en guise de salade&nbsp;<i>(merci \u00e0 <a title=\"cuisine de la mer\" href=\"http:\/\/www.cuisinedelamer.com\" target=\"_blank\" rel=\"noopener\">Patrick Cadour<\/a> pour les infos transmises \u00e0 propos du \u00ab\u00a0crab vegetable\u00a0\u00bb,&nbsp;gr\u00e2ce \u00e0 lui, j&rsquo;en connais maintenant le nom exact).<\/i>&nbsp;Le chef a trouv\u00e9 cela hilarant \u2026 moi, un peu moins car je suis tr\u00e8s fi\u00e8re et j&rsquo;aime pas qu&rsquo;on se paie ma tronche m\u00eame si je le m\u00e9rite. On le fait frire pour qu&rsquo;il soit super croustillant dehors et encore rose dedans, on le sert avec une sauce au tamarin et des l\u00e9gumes saut\u00e9s. J&rsquo;ai beaucoup appr\u00e9ci\u00e9 la mani\u00e8re de cuire le canard, je vais conserver cette technique \u00e0 l&rsquo;avenir (si un jour je trouve du magret de canard au march\u00e9 \u2026 ce qui semble peu probable), la sauce au tamarin \u00e9tait bonne mais pas aussi d\u00e9licieuse que celle de Nan. Je pense que je vais modifier un peu la recette pour obtenir une sauce plus parfum\u00e9e et plus douce. Ce sont de petites cr\u00eapes \u00e0 base de farine de riz et de lait de coco, elles contiennent du porc hach\u00e9, des crevettes et des oignons frais. Elles sont cuites dans une po\u00eale sp\u00e9ciale \u00e0 alv\u00e9oles. J&rsquo;\u00e9tais tomb\u00e9e sur une&nbsp;<strong>recette de banh khot<\/strong> en consultant l<a title=\"banh khot\" href=\"http:\/\/misstamkitchenette.com\/banh-khot\/\" target=\"_blank\" rel=\"noopener\">e super blog de miss T\u00e2<\/a>m. J&rsquo;avais vraiment envie d&rsquo;apprendre \u00e0 les pr\u00e9parer. La nourriture est savoureuse et parfum\u00e9e, accompagn\u00e9e de tas de l\u00e9gumes frais. Les go\u00fbt sont plus discrets que ceux de la nourriture tha\u00efe et les mets nettement moins piment\u00e9s. C&rsquo;\u00e9tait d&rsquo;ailleurs assez amusant, le chef Tan nous a pris pour des fous lorsqu&rsquo;il a vu la quantit\u00e9 de piments et de sauce chili qu&rsquo;on ajoutait \u00e0 nos sauces. <em>\u00ab\u00a0Venez pas vous plaindre que c&rsquo;est trop fort lorsque vous mangez\u00a0\u00bb<\/em> qu&rsquo;il nous a dit avec un sourire de coin \u2026 il nous attendait au tournant et on a mang\u00e9 notre plat sans une larme, sans une goutte de sueur,&nbsp;\u00e0 son grand \u00e9tonnement.<\/p>\n\n\n\n<p>En r\u00e9sum\u00e9 : <strong>super cours de cuisine, n&rsquo;h\u00e9site pas un instant \u00e0 r\u00e9server si tu vas au Vietnam.<\/strong> Le cours est en Anglais mais il existe plein de guides qui parlent Fran\u00e7ais et qui se feront un plaisir de traduire les consignes pour toi.<br>Lors du cours, j&rsquo;ai demand\u00e9 si je devais prendre des notes, le chef Tan nous a dit qu&rsquo;on recevrait les recettes par email. Le soir m\u00eame nous avions les recettes dans notre bo\u00eete mail. <strong>Je regrette toutefois de ne pas avoir pris de notes car le d\u00e9roulement et la liste des ingr\u00e9dients ne sont pas exactement identiques sur les recettes \u00e9crites que les recettes pr\u00e9par\u00e9es ensemble.<\/strong> Rien de bien dramatique mais quand m\u00eame \u2026<br><strong>Cette journ\u00e9e compl\u00e8te nous a co\u00fbt\u00e9 69 USD par personne<\/strong>, cela inclut les transferts en voiture, la nourriture et les boissons durant la journ\u00e9e, l&rsquo;entr\u00e9e des tunnels de Cu Chi et le guide priv\u00e9. C&rsquo;est un prix tout \u00e0 fait correct par rapport \u00e0 la prestation fournie.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La fabrication des galettes de riz artisanales<\/h3>\n\n\n\n<p>Vers 13h30, nous sommes repartis en voiture et nous nous sommes rendus dans un village avoisinant pour y d\u00e9couvrir comment r\u00e9aliser des galettes de riz. Tu sais, celles qu&rsquo;on utilise pour les nems.<br>Il faut tout d&rsquo;abord broyer le riz. Avec cette farine de riz, on pr\u00e9pare un p\u00e2te assez \u00e9paisse. Cette p\u00e2te est \u00e9tal\u00e9e sur un chiffon tendu sur une jarre&nbsp;en terre cuite.&nbsp;Dans cette jarre il y a de l&rsquo;eau bouillante qui cr\u00e9\u00e9e de la vapeur. La galette de riz est cuite ainsi, \u00e0 la vapeur, durant une dizaine de secondes. On la retire du tissus et on la d\u00e9pose d\u00e9licatement sur une natte de bambou. Elle sera alors s\u00e9ch\u00e9e au soleil.
