En Tha\u00eflande, on mange aussi les feuilles de l&rsquo;arbre crues ou cuites. En Birmanie, l&rsquo;\u00e9corce de ce m\u00eame arbre est s\u00e9ch\u00e9e et r\u00e9duite en poudre. J&rsquo;ai p\u00e9t\u00e9 les plombs et cri\u00e9 au scandale&#8230; et j&rsquo;ai vu notre employ\u00e9 birman commencer \u00e0 suer \u00e0 grosses gouttes. Il m&rsquo;a fallu un moment comprendre ce qu&rsquo;il avait fait de l&rsquo;\u00e9corce de cet arbre. Il a fallu encore plus de temps pour qu&rsquo;il comprenne que j&rsquo;aimais autant lui donner 40 baht pour qu&rsquo;il ach\u00e8te cette poudre miracle \u00e0 la pharmacie locale plut\u00f4t que de voir mon arbre amput\u00e9. Pour consommer se fruit, on casse l&rsquo;\u00e9corce qui est fine et dure. G\u00e9n\u00e9ralement, je pr\u00e9pare le tamarin en fonction de mes besoins. La pulpe de tamarin se conserve longtemps (plusieurs semaines) au frais.<br>Mais il est aussi possible de pr\u00e9parer du concentr\u00e9 de tamarin en grande quantit\u00e9 et de le conserver dans un bocal st\u00e9rilis\u00e9 ou au cong\u00e9lateur : congel\u00e9 par partions dans un bac \u00e0 gla\u00e7ons. Fais en sorte de bien frotter les noyaux entre eux pour d\u00e9tacher toute la chair. Il suffit de <strong>porter \u00e0 \u00e9bullition le concentr\u00e9 de tamarin <\/strong>dans une petite casserole et de <strong>le verser bouillant dans des bocaux \u00e0 confiture pr\u00e9alablement st\u00e9rilis\u00e9s. <\/strong>Referme le couvercle et laisser refroidir.
