Il y a tellement \u00e0 dire et tant d&rsquo;histoires \u00e0 raconter que je ne savais pas trop par o\u00f9 commencer. Et puis voil\u00e0, ces 2 derniers mois ont \u00e9t\u00e9 une sorte d&rsquo;apoth\u00e9ose qui r\u00e9sume parfaitement ce qui se passe dans ce pays, je me d\u00e9cide donc \u00e0 t&rsquo;en donner un aper\u00e7u avant de te parler de cette nouvelle <strong>recette d&rsquo;encornets vapeur au citron, \u00e0 l\u2019ail et au piment, <\/strong>qu&rsquo;on appelle ici: <em>plamuk nung manao. <\/em><br>Histoire longue et douloureuse, clique sur le bouton ci-dessous si tu veux juste la recette \ud83d\ude06 <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">La vie en Tha\u00eflande<\/h4>\n\n\n\n<p><em>(histoire de f\u00e9vrier 2015, article remis \u00e0 jour)<\/em> Je n&rsquo;ai pas vraiment cuisin\u00e9 ces derni\u00e8res semaines, je n&rsquo;en ai eu ni le temps, ni l&rsquo;\u00e9nergie. Les touristes sont souvent sous le charme car les gens sont serviables et souriants, la nourriture est bonne, le soleil donne &#8230; et tout et tout ! Mais lorsqu&rsquo;on y habite et qu&rsquo;on y travaille, tu t&rsquo;en doutes bien, c&rsquo;est une autre histoire.<\/p>\n\n\n\n<p>Actuellement, je suis engag\u00e9e en tant qu&rsquo;enseignante d&rsquo;Anglais (conversation) dans un lyc\u00e9e du sud de la Tha\u00eflande. Je travaille pour le gouvernement de la province, pour un projet qui vise \u00e0 \u00e9lever le niveau d&rsquo;anglais dans sud de la Tha\u00eflande en vue de l&rsquo;ouverture des fronti\u00e8res en Asie (sur une \u00e9chelle de 0 \u00e0 10, leur niveau actuel se situe aux alentours de -25). <br>Dans le cadre de ce projet, le gouvernement a engag\u00e9 40 enseignants \u00e9trangers. Comme personne ne veut se prendre la t\u00eate \u00e0 g\u00e9rer un groupe d&rsquo;\u00e9trangers, ce m\u00eame gouvernement a engag\u00e9 un interm\u00e9diaire. Le gouvernement a donc un contrat avec une agence qui, \u00e0 son tour, a un contrat avec moi. <br>L&rsquo;agence me fournit un permis de travail et tous les documents n\u00e9cessaires \u00e0 l&rsquo;obtention de mon visa. Ce dernier est valable une ann\u00e9e. Jusque l\u00e0, rien de bien \u00e9trange, me diras-tu &#8230;<\/p>\n<\/div>\n<\/div>\n\n\n\n<p>En tant qu&rsquo;\u00e9tranger, on doit aller pointer au bureau local d&rsquo;immigration tous les 3 mois. D\u00e9but F\u00e9vrier, je me rends avec Nan au bureau d&rsquo;immigration pour mon pointage trimensuel. <\/p><div id=\"aupay-4235082095\" class=\"aupay-insert-post aupay-entity-placement\" style=\"margin-top: 6px;margin-bottom: 6px;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-4895771430947602\" crossorigin=\"anonymous\"><\/script><ins class=\"adsbygoogle\" style=\"display:block; text-align:center;\" data-ad-client=\"ca-pub-4895771430947602\" \ndata-ad-slot=\"8266270428\" \ndata-ad-layout=\"in-article\"\ndata-ad-format=\"fluid\" data-full-width-responsive=\"true\"><\/ins>\n<script> \n(adsbygoogle = window.adsbygoogle || []).push({}); \n<\/script>\n<\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Partie de l&rsquo;histoire o\u00f9 les choses se compliquent<\/h4>\n\n\n\n<p>L&rsquo;officier commence \u00e0 discuter avec Nan et je comprends qu&rsquo;il y a un probl\u00e8me. Je vois Nan se d\u00e9composer mais personne ne se donne la peine de traduire quoi que ce soit pour moi. Sachant qu&rsquo;ils parlent de ma situation, je commence \u00e0 chauffer. <br>Finalement j&rsquo;ai droit \u00e0 une explication r\u00e9sum\u00e9e, l&rsquo;officier du bureau d&rsquo;immigration sort son plus bel Anglais et me dit : <strong>\u00ab\u00a0Next time, visa cannot renew\u00a0\u00bb<\/strong>.<br>QUOI ??? Mais qu&rsquo;est-ce que tu me racontes l\u00e0 ?<br>Voyant que je perds patience, Nan se d\u00e9cide enfin \u00e0 me dire que l&rsquo;agence qui m&rsquo;engage a une activit\u00e9 non d\u00e9clar\u00e9e&nbsp;et que toute demande de visa sera refus\u00e9e. Cela signifie qu&rsquo;il me reste 2 mois pour trouver une solution avant d&rsquo;\u00eatre expuls\u00e9e du pays.<br>&#8211; Premi\u00e8re \u00e9tape : comprendre ce qui se passe. En Tha\u00eflande, pour obtenir des informations, il faut faire jouer ses relations car personne ne s&rsquo;abaisse \u00e0 parler directement \u00e0 un \u00e9tranger ou \u00e0 quelqu&rsquo;un qu&rsquo;il ne connait pas. T&rsquo;as pas de relations haut plac\u00e9es ? T&rsquo;es dans la merde !<br>Nan a pass\u00e9 des heures au t\u00e9l\u00e9phone avec tous ses copains de la police et du gouvernement pour finalement avoir les informations n\u00e9cessaires : l&rsquo;agence en question avait pour habitude de graisser la patte de tous les officiers pour l&rsquo;obtention de nos documents officiels. C&rsquo;est une pratique courante en Tha\u00eflande, cela \u00e9vite de passer trop de temps dans les administrations. Cela leur \u00e9vitait aussi de faire les documents n\u00e9cessaires \u00e0 l&rsquo;enregistrement d&rsquo;un business et donc de payer tous les frais r\u00e9glementaires ou les taxes. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">C&rsquo;est la panique ! <\/h4>\n\n\n\n<p>L&rsquo;ann\u00e9e derni\u00e8re, il y a eu un coup d&rsquo;Etat. Le pays est maintenant dirig\u00e9 par un gouvernement provisoire qui a pour but de le nettoyer de toute corruption. Tous les haut-fonctionnaires en charge des offices du sud ont \u00e9t\u00e9 remplac\u00e9s. Les nouveaux officiers en charge sont suivis de pr\u00e8s : impossible (ou du moins plus difficile) de succomber \u00e0 la tentation d&rsquo;arrondir les fins de mois. Cela signifie, pour nous autres commun des &nbsp;mortels, une vie nettement moins ch\u00e8re mais bien moins facile. <br>Avant, il suffisait de sortir le porte-monnaie pour obtenir ce que tu voulais. Maintenant, il faut passer par toutes les \u00e9tapes officielles et le syst\u00e8me tha\u00ef n&rsquo;a pas vraiment \u00e9t\u00e9 pr\u00e9vu pour des gens qui respectent les lois. Pour revenir \u00e0 mon agence, elle n&rsquo;est pas enregistr\u00e9e correctement et emploie 40 enseignants \u00e9trangers alors que l\u00e9galement un maximum de 6 \u00e9trangers par \u00e9cole est autoris\u00e9. <br>En bref : j&rsquo;ai r\u00e9alis\u00e9 que j&rsquo;\u00e9tais pas sortie de l&rsquo;auberge<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>On a tent\u00e9 de contacter le gouverneur de la province, il a r\u00e9pondu : <em>\u00ab\u00a0Nous sommes en r\u00e8gle, nous avons un contrat l\u00e9gal avec une agence. Ce qui se passe ensuite n&rsquo;est pas notre&nbsp;probl\u00e8me.\u00a0\u00bb <\/em>Tu connais la tactique de l&rsquo;autruche ? Je te fais un r\u00e9sum\u00e9 de ce qui s&rsquo;est pass\u00e9 ces 2 derniers mois :<br>L&rsquo;immigration a dit que la seule solution pour moi \u00e9tait d&rsquo;obtenir un permis de travail de la part de mon lyc\u00e9e et non de la part de l&rsquo;agence.<br>Pour obtenir ce permis de travail, j&rsquo;ai d\u00fb faire une demande de license d&rsquo;enseignant.<br>Pour obtenir cette license, il m&rsquo;a fallu un contrat de l&rsquo;\u00e9cole (qu&rsquo;on a falsifi\u00e9 puisque l&rsquo;\u00e9cole n&rsquo;est pas mon employeur) et il me fallait aussi suivre un cours de culture tha\u00efe. Mais &#8230;<br>ce cours de culture tha\u00efe a \u00e9t\u00e9 supprim\u00e9 jusqu&rsquo;\u00e0 nouvel avis, il n&rsquo;est donc pas possible d&rsquo;obtenir une license d&rsquo;enseignement en Tha\u00eflande &#8230; Tu vois le genre !<\/p>\n\n\n\n<p>Du coup j&rsquo;ai obtenu une recommandation provisoire dans le but d&rsquo;obtenir un nouveau permis de travail. Tous cela a pris 3 semaines.<br>Nous avons pr\u00e9par\u00e9 des tones de documents puis nous nous sommes rendus \u00e0 l&rsquo;office du travail pour \u00e9tablir un nouveau permis de travail. Comme de bien entendu, il y a eu un hic : l&rsquo;officier nous a expliqu\u00e9 qu&rsquo;il ne pouvait pas d\u00e9livrer un permis de travail au nom de mon lyc\u00e9e puisque ce n&rsquo;est pas le lyc\u00e9e qui paie mon salaire ! &nbsp;<br>Et hop, retour \u00e0 la case d\u00e9part.<br><strong>MAIS POURQUOI VEULENT-ILS SUPPRIMER LA CORRUPTION? c&rsquo;\u00e9tait tellement plus simple avant !<\/strong> Pour une centaine d&rsquo;euros, tu obtenais tout ce que tu voulais !<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Tout est bien qui finit bien ! \ud83d\udc4d <\/h4>\n\n\n\n<p>Apr\u00e8s des heures et des jours de crises, apr\u00e8s des milliers de coups de t\u00e9l\u00e9phones, ma fantastique coll\u00e8gue a trouv\u00e9 une br\u00e8che dans le raisonnement de ces fonctionnaires, on a fonc\u00e9 dans le tas (elle toujours polie et souriante et moi comme un pitbull enrag\u00e9) et j&rsquo;ai finalement obtenu mon permis de travail (au nom de l&rsquo;agence pourrie mais avec endorsement de mon lyc\u00e9e) puis avec les documents de l&rsquo;agence + tous les documents de mon lyc\u00e9e + le soutien en personne de mon directeur, j&rsquo;ai pu renouveler mon visa pour une ann\u00e9e, au grand m\u00e9contentement des officiers de l&rsquo;immigration qui n&rsquo;ont pas trouv\u00e9 de faille dans mon dossier. On peut dire qu&rsquo;il me l&rsquo;ont donn\u00e9 \u00e0 contre-coeur.<\/p>\n\n\n\n<p>Avec tout \u00e7a, j&rsquo;ai obtenu mon visa il y a 4 jours &#8230; et l\u00e0, <strong>\u00e7a m&rsquo;a donn\u00e9 les crocs.<\/strong><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">On fonce au march\u00e9 ! <\/h4>\n\n\n\n<p>Moi qui n&rsquo;avais pas eu le \ud83d\udc95 \u00e0 cuisiner ces derniers temps, j&rsquo;ai fonc\u00e9 au march\u00e9, je suis tomb\u00e9e sur un jour d&rsquo;opulence au march\u00e9 des poissons. Nez \u00e0 nez avec des superbes raies aigles qui seraient mieux sous l&rsquo;eau que sur des \u00e9tals, des b\u00e9b\u00e9s requins \u00e0 pointe noire qui n&rsquo;arrivent que sous la forme de b\u00e9b\u00e9 tellement les adultes ont \u00e9t\u00e9 sur-p\u00each\u00e9s et plein d&rsquo;autres poissons en tout genre dont quelques uns que je n&rsquo;avais jamais vu auparavant. Y en avait un tout plat (comme un platax) avec une monstre bosse sur la t\u00eate, il \u00e9tait pas beau mais la marchande a tout de m\u00eame essay\u00e9 de me le refourguer. Je me m\u00e9fie toujours lorsque les marchands sont trop insistants, c&rsquo;est soit un poisson super cher, soit un poisson que personne d&rsquo;autre ne veut \ud83d\ude02.<br>J&rsquo;avais en t\u00eate d&rsquo;acheter du crabe mais c&rsquo;\u00e9tait sans compter que pour le crabe, il faut arriver au march\u00e9 avant 8h. Ils \u00e9taient beaux (et sentaient bon le sable chaud) et frais et je les ai tout de suite imagin\u00e9s dans mon assi\u00e8te en salivant et parlant toute seule (comme d&rsquo;habitude).<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">D&rsquo;autres recettes avec du calmar : <\/h4>\n\n\n\n<div class=\"wp-block-columns is-layout-flex piment, enfin ! <\/h3>\n\n\n\n<p>&#8211; Cette <strong>recette de calmar<\/strong> se pr\u00e9pare traditionnellement avec <a href=\"https:\/\/www.aupaysdespiments.com\/en\/poisson-a-la-vapeur-au-citron-vert-et-a-lail\/\" target=\"_blank\" rel=\"noreferrer noopener\">du poisson (<em>pla neung manao<\/em>).<\/a> On cuit g\u00e9n\u00e9ralement un poisson entier \u00e0 la vapeur et on le recouvre de cette d\u00e9licieuse <a href=\"https:\/\/www.aupaysdespiments.com\/en\/poisson-a-la-vapeur-au-citron-vert-et-a-lail\/\" target=\"_blank\" rel=\"noopener\">sauce au citron<\/a>.<br><br>&#8211; Pour cette recette, j&rsquo;ai utilis\u00e9 <strong>8 piments<\/strong>, c&rsquo;est une dose de piquant qui convient \u00e0 mes go\u00fbts : juste assez, pas trop. Je n&rsquo;utilise que les rouges car il est ainsi possible de diff\u00e9rencier les morceaux de piments des herbes aromatiques, cela \u00e9vite les mauvaises surprises. (il faut toujours se m\u00e9fier des piments verts qui se cachent dans un plat).<br>Si tu veux pr\u00e9parer une recette tha\u00efe authentique, il faut augmenter la dose de piments. Tu peux compter une grosse poign\u00e9es, entre 20 et 30 pi\u00e8ces.
