Elle-m\u00eame l&rsquo;avait trouv\u00e9e, si je me souviens bien car \u00e7a fait un bail (en tous cas 20 bonnes ann\u00e9es), dans un <strong>livre de recette de <a href=\"https:\/\/www.bettybossi.ch\/fr\/Rezept\/Intro\" target=\"_blank\" rel=\"noopener\">Betty Bossi<\/a><\/strong>. Tu connais ? Betty Bossi est \u00e0 la Suisse ce que Martha Steewart est aux Etats-Unis et Donna Hay \u00e0 l&rsquo;Australie ! Betty Bossi a accompagn\u00e9 nos premiers pas en cuisine, notamment avec ses recettes originales de cakes qu&rsquo;on pr\u00e9parait pour apporter aux boums des copains ! Tout cela pour dire que c&rsquo;est une recette d&rsquo;avant-guerre mais que si je la pr\u00e9pare encore aujourd&rsquo;hui c&rsquo;est pour la simple et bonne raison que \u00e7a d\u00e9chire ! Pour justifier cela je n&rsquo;ajouterai qu&rsquo;une chose\u00a0: Nan a d\u00e9clar\u00e9\u00a0: \u00ab\u00a0ce n&rsquo;est pas une <strong>recette tha\u00efe<\/strong> mais c&rsquo;est aussi bon qu&rsquo;une recette tha\u00efe\u00a0\u00bb ! Premi\u00e8re fois que je l&rsquo;entends dire cela de bon c\u0153ur sans \u00eatre menac\u00e9 de dormir dans le hamac de la terrasse.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Petite anecdote \u00e0 propos de cette recette de poisson \u00e0 la noix de coco et au tamarin<\/h3>\n\n\n\n<p>Fait amusant, c&rsquo;est \u00e0 cause de cette recette qu&rsquo;\u00e0 l&rsquo;\u00e9poque de ma jeunesse j&rsquo;ai d\u00e9couvert le tamarin. Pour le d\u00e9gotter, je devais prendre le train, aller \u00e0 Gen\u00e8ve \u00e0 40km de chez moi. Et l&rsquo;acheter dans une \u00e9picerie asiatique pleine de trucs que je ne connaissais pas. Toute une exp\u00e9dition.<br>Aujourd&rsquo;hui, le <a href=\"https:\/\/www.aupaysdespiments.com\/en\/comment-preparer-du-concentre-de-tamarin-maison\/\" target=\"_blank\" rel=\"noreferrer noopener\">tamarin<\/a> est un \u00e9l\u00e9ment indispensable \u00e0 ma cuisine quotidienne : sauces, boissons, desserts, soupes. Il est omnipr\u00e9sent.<\/p>\n\n\n\n<p>Quand au poisson, chaque fois que j&rsquo;en pr\u00e9pare, je me trouve coinc\u00e9e entre mon estomac et ma conscience. L&rsquo;un me dit : \u00ab\u00a0oh la la, c&rsquo;est trop bon\u00a0\u00bb et l&rsquo;autre r\u00e9pond : \u00ab\u00a0mange pas \u00e7a, tu participes \u00e0 la destruction de nos oc\u00e9ans\u00a0\u00bb.<br>Ces derniers jours, j&rsquo;ai regard\u00e9 la s\u00e9rie TV qui pr\u00e9sente le travail en mer de Sea Shepherd, Ocean Warriors. Bien que je sois parfaitement consciente du massacre de nos oc\u00e9ans puisque j&rsquo;ai travaill\u00e9 sous l&rsquo;eau durant 6 ans,\u00a0ces reportages renforcent encore l&rsquo;importance de bien choisir le type de poisson que l&rsquo;on consomme et le fait de se renseigner sur les techniques de p\u00eaches utilis\u00e9es.<br>Malgr\u00e9 tous mes efforts pour \u00e9viter de participer \u00e0 la surp\u00eache, je me retrouve toujours avec mon cong\u00e8le plein de poissons. Cela me colle la d\u00e9prime. La s\u0153ur de Nan r\u00e9ceptionne la p\u00eache au port des p\u00eacheurs. Il lui arrive de se dire que ce serait sympa de m&rsquo;offrir du poisson frais. Je me suis retrouv\u00e9e avec presque 2kg de crevettes GEANTES sur les bras ainsi que 3kg de calmars. Elle a pens\u00e9 qu&rsquo;on appr\u00e9cierait sans doute du calamar grill\u00e9 avec nos crevettes. A cela, elle a ajout\u00e9 2 gros poissons dont je ne connais pas le nom mais qui sont, semble-t-il, d\u00e9licieux et impossibles \u00e0 trouver au march\u00e9 car les restaurants se les arrachent. Alors fais-moi le plaisir de d\u00e9gotter un superbe poisson issu de p\u00eache durable et pr\u00e9pare-le avec amour. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Quelques conseils pour pr\u00e9parer ce poisson<\/h3>\n\n\n\n<p>\ud83c\udf36\ufe0f Tu peux pr\u00e9parer des darnes ou un poisson entier. Cette fois, le poisson \u00e9tait bien trop grand pour 2, j&rsquo;ai donc choisi de cuisiner que la queue.<br>\ud83c\udf36\ufe0f <strong>La marinade est tr\u00e8s importante<\/strong>. Il faut donc t&rsquo;y prendre quelques heures \u00e0 l&rsquo;avance pour que le poissons aie bien le temps de mariner.<br>\ud83c\udf36\ufe0f C&rsquo;est un plat accompagne parfaitement du riz et des l\u00e9gumes saut\u00e9s.<br>\ud83c\udf36\ufe0f Pour ce plat, il faut du concentr\u00e9 de tamarin, c&rsquo;est facile \u00e0 pr\u00e9parer \u00e0 partir de tamarin. <strong><a
