On l&rsquo;appelle <em><strong>Pla nung manao<\/strong><\/em> (poisson vapeur citron traduit litt\u00e9ralement). J&rsquo;ai d\u00e9j\u00e0 post\u00e9 <a href=\"https:\/\/www.aupaysdespiments.com\/en\/encornets-vapeur-au-citron-a-lail-et-au-piment\/\" target=\"_blank\" rel=\"noopener\">une recette de calmars pr\u00e9par\u00e9s de la m\u00eame fa\u00e7on<\/a>. Mais je viens de d\u00e9couvrir <strong>un ingr\u00e9dient sp\u00e9cial<\/strong> qui donne une autre dimension \u00e0 ce plat. Il est donc temps de partager avec toi cette d\u00e9couverte.<\/p>\n\n\n\n<p>Lorsqu&rsquo;on mange au restaurant, on commande presque toujours du <strong>poisson \u00e0 la vapeur<\/strong> ou du tom yam. Cela change un peu des autres plats tha\u00efs qui comportent souvent de la friture ou des sauces avec beaucoup de sucre. C&rsquo;est un plat extr\u00eamement piment\u00e9 si tu le commandes au restaurant : le poisson est compl\u00e8tement recouvert de piments hach\u00e9s.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">L&rsquo;histoire du fameux poisson \u00e0 la vapeur, au citron vert et \u00e0 l&rsquo;ail<\/h3>\n\n\n\n<p>Nan m&rsquo;a souvent parl\u00e9 du poisson \u00e0 la vapeur pr\u00e9par\u00e9 par une de ses s\u0153urs. <em>\u00ab\u00a0Il est bien meilleur que celui-ci\u00a0\u00bb<\/em> que j&rsquo;entendais \u00e0 tout-vent !<br>Du coup, comme j&rsquo;ai eu de la visite de Suisse, et que mes amis arrivaient tard le soir, trop tard pour aller au restaurant, j&rsquo;ai engag\u00e9 la fameuse s\u0153ur de Nan pour pr\u00e9parer notre repas. Je ne voulais pas passer mon temps en cuisine. Je voulais profiter de la soir\u00e9e avec mes amis. Elle l&rsquo;a bien compris, et c&rsquo;est sans scrupules qu&rsquo;elle m&rsquo;a tax\u00e9, \u00e0 elle toute seule, le salaire qu&rsquo;on paierait \u00e0 toute une \u00e9quipe de cuisine ! \ud83d\ude06<br>Bref, on a r\u00e9dig\u00e9 le menu ensemble : <strong>poisson \u00e0 la vapeur au citron et \u00e0 l&rsquo;ail<\/strong>, <strong>crabes \u00e0 la sauce de haricots jaunes<\/strong> et <strong>calmar saut\u00e9 au poivre<\/strong>.<br>J&rsquo;ai eu l&rsquo;occasion de voir la pr\u00e9paration des plats et de fouiner dans la cuisine quand elle cuisinait. Le jus est \u00e0 la fois acidul\u00e9, sal\u00e9 et sucr\u00e9. La soeur de Nan utilise donc de l&rsquo;ail frais ET des pickles d&rsquo;ail. Elle cuisine dr\u00f4lement bien !<\/p>\n\n\n\n<p>Elle a m\u00eame eu la d\u00e9licatesse d&rsquo;attendre la fin du repas pour me balancer la facture. Cela m&rsquo;a permis d&rsquo;appr\u00e9cier les crabes et le poisson avant de me choper un ulc\u00e8re !<\/p>\n<\/div>\n<\/div>\n\n\n\n<p>Le lendemain, elle a appel\u00e9 Nan pour lui faire remarquer que j&rsquo;avais re\u00e7u beaucoup de chocolat de Suisse et qu&rsquo;elle y go\u00fbterait bien ! du coq \u00e0 l&rsquo;\u00e2ne et je te raconte la suite de mon d\u00e9m\u00e9nagement.<br>En Tha\u00eflande, quand tu es prof, tu as des droits sur tes \u00e9l\u00e8ves. Ici, l&rsquo;\u00e9galit\u00e9 et la libert\u00e9 sont des notions tr\u00e8s vagues. Il y a des couches sociales tr\u00e8s marqu\u00e9es, on respecte l&rsquo;autorit\u00e9. Pour moi, c&rsquo;est difficile. Je ne m&rsquo;habitue pas \u00e0 courber l&rsquo;\u00e9chine devant des gens que je ne connais pas (ou m\u00eame ceux que je connais, d&rsquo;ailleurs) pour la simple raison qu&rsquo;ils on plus d&rsquo;argent que moi ou qu&rsquo;ils font partie de la municipalit\u00e9 ou de la police locale. J&rsquo;ai aussi de la peine \u00e0 accepter que mes \u00e9l\u00e8ves se comportent ainsi vis \u00e0 vis de moi. C&rsquo;est assez \u00e9trange de ne pas avoir d&rsquo;\u00e9l\u00e8ves avec du r\u00e9pondant. Lorsqu&rsquo;on a une r\u00e9union, on s\u00e9lectionne un groupe d&rsquo;\u00e9l\u00e8ves pour installer la salle, servir les boissons et nettoyer apr\u00e8s notre passage. <\/p>\n\n\n\n<p>En gros, les \u00e9l\u00e8ves sont \u00e0 notre disposition, c&rsquo;est normal, c&rsquo;est comme \u00e7a. Il n&rsquo;a pas de concierge ou d&rsquo;\u00e9quipe de nettoyage vu qu&rsquo;on a de la main-d\u2019\u0153uvre&nbsp; gratuite en grand nombre !<\/p>\n<\/div>\n<\/div>\n\n\n\n<p>A l&rsquo;\u00e9cole, on apprend la soumission. Pas de libre pens\u00e9e, pas de contestation, pas de r\u00e9bellion. \u00c7a choque, non ?<br>Du coup, lorsque j&rsquo;ai d\u00e9m\u00e9nag\u00e9 et que j&rsquo;ai eu besoin de repeindre la maison, mes coll\u00e8gues (et Nan aussi) m&rsquo;ont dit : <em>\u00ab\u00a0demande \u00e0 un groupe d&rsquo;\u00e9l\u00e8ves\u00a0\u00bb<\/em>.<br>Ok&#8230; l&rsquo;id\u00e9e ne m&rsquo;a pas paru mauvaise : je peux plus facilement contr\u00f4ler un groupe d&rsquo;\u00e9l\u00e8ves qu&rsquo;un groupe d&rsquo;ouvriers tha\u00efs (parce que l\u00e0 aussi, j&rsquo;ai des histoires \u00e0 raconter !)<br>et mes coll\u00e8gues de rajouter : <em>et en plus t&rsquo;as pas besoin de les payer !<\/em><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Au boulot ! <\/h4>\n\n\n\n<p><em>QUOI ???? Tu te moques ? Tu veux que je fasse bosser des \u00e9l\u00e8ves, durant le week-end, chez moi, sans m\u00eame les payer ? <\/em>Apparemment, il n&rsquo;y a que moi que cette id\u00e9e d\u00e9rangeait, parce que quand j&rsquo;ai demand\u00e9 \u00e0 mes \u00e9l\u00e8ves de venir peindre chez moi, ils \u00e9taient tout contents et ils ont refus\u00e9 d&rsquo;\u00eatre pay\u00e9s.<br>Ils ont fait un march\u00e9 : ils proposaient de venir \u00e0 6 pour peindre ma maison durant 2 jours \u00e0 condition que je fasse passer le semestre \u00e0 2 d&rsquo;entre eux qui \u00e9taient en \u00e9chec. Ca m&rsquo;a tellement impressionn\u00e9e de voir un groupe de copains solidaires venir bosser \u00e0 l\u2019\u0153il pour aider leurs potes \u00e0 passer l&rsquo;ann\u00e9e que j&rsquo;ai accept\u00e9 le deal ! (de toutes fa\u00e7ons, l&rsquo;\u00e9cole publique en Tha\u00eflande, c&rsquo;est comme l&rsquo;\u00e9cole de fans, tout le monde gagne au final, il n&rsquo;y a pas d&rsquo;\u00e9chec).<br>Ils sont venus \u00e0 6.<br>6 grands gaillard de 18 ans, pour repeindre ma maison durant 2 jours. Ils ont pas ch\u00f4m\u00e9, pas de fain\u00e9antise, ils ont boss\u00e9 comme des Dieux de 8h du mat \u00e0 16h. redonner un peu de peps \u00e0 ma conscience). Je les ai pay\u00e9 200 baht par jour par personne : 200 baht = 5 euros ! &nbsp;Sauf pour les 2 qui ont marchand\u00e9 le passage du semestre (on ne peut pas \u00eatre prof sans avoir un c\u00f4t\u00e9 sadique), eux, ils ont eu droit \u00e0 un seul jour de paie !<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<p>En fin de week-end, ils \u00e9taient lessiv\u00e9s mais heureux.
