Pourquoi ? Bah &#8230; parce que je mange tellement de riz qu&rsquo;il arrive souvent qu&rsquo;il me sorte par les oreilles.<br>Ici, on mange du riz 3 fois par jour : au petit d\u00e9jeuner, au d\u00e9jeuner et au d\u00eener.<br>Et entre les repas, que fait-on ? On mage des snacks \u00e0 base de riz !  <br>Bon, il s&rsquo;agit de riz gluant et il a un go\u00fbt sucr\u00e9. Mais c&rsquo;est quand m\u00eame du riz.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le petit d\u00e9jeuner en Tha\u00eflande<\/h2>\n\n\n\n<p>Le matin de bonne heure, aux environs de 5 heures, les m\u00e9nag\u00e8res tha\u00efes se l\u00e8vent et commencent \u00e0 cuisiner. Elles pr\u00e9parent le petit d\u00e9jeuner : du riz blanc et quelques accompagnements comme une soupe de poisson, du poisson frit, des <a href=\"https:\/\/www.aupaysdespiments.com\/en\/calmars-sautes-a-la-confiture-de-piments\/\" target=\"_blank\" rel=\"noopener\">calmars saut\u00e9s<\/a> ou du poulet. Avant 7 heures, toute la maisonn\u00e9e a mang\u00e9 le premier repas, arros\u00e9 de p\u00e2te de crevette piment\u00e9e ou de sauce de poisson piment\u00e9e et aill\u00e9e. <br>Le matin, pour ceux qui ne sont pas d&rsquo;humeur \u00e0 se lever t\u00f4t ou \u00e0 cuisiner, on trouve toutes sortes de stands ambulants vendant des petits-d\u00e9j \u00e0 l&#8217;emporter : <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-riz-thai\/\" target=\"_blank\" rel=\"noopener\">salade de riz<\/a>, <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-nouilles-de-riz-la-sauce-tamarin-cacahuetes\/\" target=\"_blank\" rel=\"noreferrer noopener\">salade de nouilles<\/a>, poulet frit et riz gluant, <a href=\"https:\/\/www.aupaysdespiments.com\/en\/riz-au-poulet-kao-man-gai\/\" target=\"_blank\" rel=\"noreferrer noopener\">riz au poulet<\/a>, beignets, et snacks \u00e0 base de riz et de noix de coco. Si tu arrives \u00e0 te lever avant 7h00, tu as la chance de pouvoir choisir ton petit-d\u00e9j. Si tu as de la peine \u00e0 sortir du lit et que tu arrives apr\u00e8s 8h00, tu n&rsquo;as pas le choix, tu te contentes du peu qu&rsquo;il reste chez la marchande.<br>Alors, le riz saut\u00e9, tu commences \u00e0 comprendre pourquoi j&rsquo;en mange pas souvent. Mais, je dois dire, que quand il se trouve devant moi, il ne me d\u00e9plait pas, bien au contraire. C&rsquo;est toujours d\u00e9licieux ! <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les diff\u00e9rentes fa\u00e7ons de pr\u00e9parer le riz frit (ou riz saut\u00e9)<\/h2>\n\n\n\n<p>\ud83c\udf5a Il existe des centaines de pr\u00e9parations diff\u00e9rentes pour faire du bon\u00a0riz frit. Certaines plus sophistiqu\u00e9es que d&rsquo;autres. A la base, le riz saut\u00e9 est un moyen de <strong>recycler les restes de riz de la veille<\/strong>. A cela on ajoute quelques l\u00e9gumes et des prot\u00e9ines. Dans la r\u00e9gion o\u00f9 j&rsquo;habite, il s&rsquo;agit le plus souvent d&rsquo;oignon, de carotte, de chou, de brocoli chinois. Mais on peut parfois y trouver des tomates, du mini-ma\u00efs, des pois mange-tout, des oignons nouveaux.<br>Certains y ajoutent m\u00eame de l&rsquo;ananas, des pousses d&rsquo;haricots mungo, des noix\u00a0de cajou.<br>\ud83c\udf5a Au niveau des prot\u00e9ines, on utilise des crevettes ou du poulet, <strong>du crabe<\/strong> ou un m\u00e9lange de fruits de mer, du porc ou du b\u0153uf. On peut aussi y ajouter des morceaux de saucisse ou du jambon.<br>\ud83c\udf5a <strong>Il y a toujours des \u0153ufs<\/strong> pour accompagner le riz frit. Soit des \u0153ufs brouill\u00e9s m\u00e9lang\u00e9s au riz, soit un oeuf au plat ou une omelette tha\u00efe servis \u00e0 c\u00f4t\u00e9 du riz.<br>\ud83c\udf5a Le riz saut\u00e9 est servi avec un quartier de citron vert, des rondelles de concombres et de <a href=\"https:\/\/www.aupaysdespiments.com\/en\/nahm-prik-condiment-thai\/\" target=\"_blank\" rel=\"noopener\">la <\/a><strong><a href=\"https:\/\/www.aupaysdespiments.com\/en\/nahm-prik-condiment-thai\/\" target=\"_blank\" rel=\"noopener\">sauce de poisson piment\u00e9e (prik nahm pla)<\/a>.<\/strong><br>\ud83c\udf5a Dans ma r\u00e9gion, le riz frit est pr\u00e9par\u00e9 <strong>avec beaucoup d&rsquo;ail<\/strong> mais pas de piment. On assaisonne le riz saut\u00e9 avec de la sauce d&rsquo;hu\u00eetre, de la sauce soja, du bouillon en poudre, de la p\u00e2te de crevettes, de la sauce de poisson, du sel, \u00e0 choix.<br>\ud83c\udf5a Pour un riz frit relev\u00e9, on ajoute un peu de <strong>p\u00e2te de curry rouge<\/strong> ou de <strong>green curry<\/strong>.\u00a0Pour un riz frit l\u00e9g\u00e8rement le <strong>riz frit tha\u00ef<\/strong> se pr\u00e9pare avec <strong>du riz parfum\u00e9 tha\u00ef<\/strong> (pas du riz basmati)<br>&#8211; le riz doit \u00eatre <strong>pas trop cuit et bien froid<\/strong>. C&rsquo;est encore meilleur si le riz a \u00e9t\u00e9 cuit la veille.<br>&#8211; on a un ratio de <strong>1 dose de l\u00e9gumes (max.) pour 2-3 doses de riz.<\/strong><br>&#8211; la viande doit \u00eatre bien cuite, les l\u00e9gumes doivent \u00eatre \u00ab\u00a0al dente\u00a0\u00bb et le riz ne doit pas \u00eatre p\u00e2teux !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Le type de riz \u00e0 utiliser pour le riz saut\u00e9<\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>Le <strong>riz tha\u00ef<\/strong> est appel\u00e9 <strong>riz parfum\u00e9<\/strong> or <strong>riz jasmin<\/strong>. <\/p>\n\n\n\n<p>Il existe en diff\u00e9rentes qualit\u00e9s. Cours en acheter un ! \ud83e\udd23<br>Ou alors, moins dr\u00f4le, tu peux cuire le riz dans ne casserole. Attention, la quantit\u00e9 d&rsquo;eau que tu utilises pour cuire le riz est PRIMORDIALE !<br>Le probl\u00e8me est que :<strong> chaque riz est diff\u00e9rent et absorbe une quantit\u00e9 d&rsquo;eau diff\u00e9rente <\/strong>en cours de cuisson.\u00a0<span style=\"text-decoration: underline;\">Il faut donc bien suivre les indications qui se trouvent sur le paquet.<\/span><br>mais aussi :<br>1. porter l&rsquo;eau et le riz \u00e0 \u00e9bullition<br>2. couvrir et baisser le feu.<br>3. Laisser cuire \u00e0 couvert \u00e0 feu tr\u00e8s doux. Lorsque le temps de cuisson touche \u00e0 sa fin, il ne devrait plus y avoir d&rsquo;eau dans la casserole.<br>4. Laisser le riz couvert, dans la casserole hors du feu, au minimum 15 minutes avant de le manger.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">De mani\u00e8re g\u00e9n\u00e9rale : <\/h4>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>Il vaut mieux sous-estimer la quantit\u00e9 d&rsquo;eau en cas de doute. Si ton riz est un peu croquant, tu peux toujours rajouter un peu d&rsquo;eau bouillante en fin de cuisson pour le terminer. Si ton riz est trop cuit, trop mou, tu peux en faire <strong><a href=\"https:\/\/www.chezmamaly.com\/post\/porridge-de-riz-rem%C3%A8de-parfait-pour-les-mauvaises-digestions\" target=\"_blank\" rel=\"noreferrer noopener\">du porridge <\/a><\/strong>ou le donner au chat mais tu peux faire une croix sur le riz frit.<br><\/p>\n\n\n\n<p>Nan cuit du riz tous les jours pour le repas de midi sur son lieu de travail. Il utilise du riz pas cher, de basse qualit\u00e9. Il doit y ajouter beaucoup plus d&rsquo;eau que le riz qu&rsquo;on a \u00e0 la maison. Je <strong>cuis alors la viande <\/strong>et je la mets de c\u00f4t\u00e9 avec les l\u00e9gumes et pour finir, je fais revenir le riz avec l&rsquo;ail et l&rsquo;oeuf. D\u00e8s que c&rsquo;est assez grill\u00e9, j&rsquo;assaisonne, j&rsquo;ajoute les l\u00e9gumes et la viande cuits, je rectifie l&rsquo;assaisonnement et le tour est jou\u00e9.<br>Si je cuisine pour beaucoup de monde, je r\u00e9alise la derni\u00e8re \u00e9tape de m\u00e9lange final et assaisonnement directement dans le plat de service.
