Depuis que j&rsquo;habite en Tha\u00eflande, je me suis habitu\u00e9e aux odeurs de nourriture qui d\u00e9rangent. Ici, on a quand m\u00eame :<br>&#8211; le durian et le <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Artocarpus_integer\" target=\"_blank\" rel=\"noreferrer noopener\">jambada<\/a> qui sont 2 fruits qui d\u00e9gagent une odeur putride, <br>&#8211; la p\u00e2te de crevettes et autres liquides \u00e0 base de gouramis ferment\u00e9s, <br>&#8211; les odeurs de viande pas fra\u00eeche au march\u00e9, le poisson s\u00e9ch\u00e9, le porc ferment\u00e9 &#8230; <br>mais le somment de l&rsquo;horreur, pour moi, ce sont les pousses de bambou ferment\u00e9es en saumure qui, une fois cuites, d\u00e9gagent une odeur puissante de pipi de chat (sans d\u00e9c ! je te jure que c&rsquo;est vrai.)<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Petite anecdote avant la recette du caramel au miso<\/h4>\n\n\n\n<p>Il y a tr\u00e8s longtemps de cela, je m&rsquo;\u00e9tais organis\u00e9 un mois de vacances pas ch\u00e8res. J&rsquo;avais trouv\u00e9 un bon deal avec un club de plong\u00e9e en Malaisie : je m&rsquo;occupais d&rsquo;accueillir les plongeurs, de nettoyer le centre et de pr\u00e9parer \u00e0 manger pour le staff en \u00e9change de plong\u00e9es gratuites. <br>Le matin, j&rsquo;arrivais avant tout le monde et je commen\u00e7ais par installer les tables et pr\u00e9parer le caf\u00e9. Ce matin l\u00e0, en arrivant au centre de plong\u00e9e, j&rsquo;ai \u00e9t\u00e9 agac\u00e9e par une odeur d&rsquo;animal crev\u00e9. Ayant un nez assez sensible, j&rsquo;ai commenc\u00e9 \u00e0 sniffer autour de moi pour trouver la charogne. J&rsquo;ai \u00e9t\u00e9 surprise de me casser le nez sur un truc qui ressemblait \u00e0 un litchi g\u00e9ant. J&rsquo;ai chop\u00e9 la chose et je l&rsquo;ai balanc\u00e9e dans la jungle, le plus loin possible de mon lieu de travail. <em>Pas de soucis car c&rsquo;est biod\u00e9gradable et bon d\u00e9barras car plus d&rsquo;odeur, tip top nickel.<\/em> <br>La journ\u00e9e s&rsquo;est d\u00e9roul\u00e9e normalement sauf au moment o\u00f9 le patron du club de plong\u00e9e a d\u00e9barqu\u00e9, super \u00e9nerv\u00e9, en demandant \u00e0 tout le monde : <em>\u00ab\u00a0Z&rsquo;avez pas vu mon Durian?\u00a0\u00bb<\/em><br>Vu que personne ne l&rsquo;avait vu, il s&rsquo;est vraiment \u00e9nerv\u00e9 : <em>\u00ab\u00a0Non mais c&rsquo;est dingue, je m&rsquo;suis fait voler mon durian !\u00a0\u00bb<\/em> <\/p>\n\n\n\n<h5 class=\"wp-block-heading\">C&rsquo;est quoi un durian ?<\/h5>\n\n\n\n<p>La recherche du durian a dur\u00e9 longtemps&#8230; moi, je m&rsquo;en suis pas m\u00eal\u00e9e car le patron avait l&rsquo;habitude de faire beaucoup de cin\u00e9ma et je n&rsquo;avais pas la moindre id\u00e9e de ce qu&rsquo;\u00e9tait un durian. J&rsquo;avais bien assez \u00e0 faire entre les promenades sur la plage et les baignades dans l&rsquo;eau \u00e0 29 degr\u00e9s. L&rsquo;apr\u00e8s-midi, un des guides locaux est all\u00e9 cueillir un durian dans son jardin et l&rsquo;a apport\u00e9 au patron, histoire de le calmer. C&rsquo;est \u00e0 ce moment l\u00e0, en voyant le gigantesque litchi brun qu&rsquo;il portait fi\u00e8rement, que j&rsquo;ai compris que j&rsquo;\u00e9tais la voleuse de durian! Je me suis fait toute petite (pas difficile) et toute discr\u00e8te (beaucoup plus dur). Elle sert de <a href=\"https:\/\/www.aupaysdespiments.com\/en\/condiment-pour-le-riz-un-gomasio-ameliore\/\" target=\"_blank\" rel=\"noopener\">condiment<\/a>.<br>Comme je suis tr\u00e8s curieuse, j&rsquo;avais envie de tester ce fameux miso. Je n&rsquo;ai donc pas h\u00e9sit\u00e9 lorsque que me suis cass\u00e9 le nez sur un bocal en faisant mon shopping. J&rsquo;ai \u00e9t\u00e9 tout d&rsquo;abord surprise par l&rsquo;odeur, puis en l&rsquo;utilisant pour pr\u00e9parer un <a href=\"https:\/\/www.aupaysdespiments.com\/en\/bouillon-aux-boulettes-de-poulet-et-aux-champignons\/\" target=\"_blank\" rel=\"noopener\">bouillon<\/a>, je n&rsquo;ai pas \u00e9t\u00e9 convaincue par son go\u00fbt puissant et j&rsquo;ai d\u00e9cid\u00e9 de ne plus m&rsquo;y int\u00e9resser.<br>C&rsquo;est en regardant mon \u00e9mission culinaire t\u00e9l\u00e9vis\u00e9e pr\u00e9f\u00e9r\u00e9e <em>(Masterchef Australia)<\/em> que j&rsquo;ai r\u00e9alis\u00e9 qu&rsquo;il existait en fait plusieurs types de miso et que je n&rsquo;\u00e9tais certainement pas tomb\u00e9e sur le plus int\u00e9ressant ou le plus facile d&rsquo;acc\u00e8s.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Le miso en dessert<\/h4>\n\n\n\n<p>J&rsquo;ai \u00e9t\u00e9 tr\u00e8s intrigu\u00e9e par une\u00a0recette de <strong>sauce caramel au miso blanc<\/strong> r\u00e9alis\u00e9e par une des contestantes. Elle avait ajout\u00e9 des cacahu\u00e8tes concass\u00e9es dans le <strong>caramel au miso<\/strong> et elle a servi cela avec une mousse au chocolat blanc et une glace au chocolat&#8230; tu vois le genre : chocolat &#8211; caramel &#8211; cacahu\u00e8tes &#8230; mhhhhhhhh!<br>Je me suis mise en t\u00eate de trouver le fameux <strong>miso blanc<\/strong> pour essayer ce caramel \u00e9trange. Il est donc plus doux et apporte une touche sal\u00e9e au caramel un peu comme un caramel au beurre sal\u00e9 mais en moins gras car presque sans beurre. Il a un petit je ne sais quoi qui le rend diff\u00e9rent de tous les caramels que j&rsquo;ai go\u00fbt\u00e9 : les morceaux de haricot qui composent le miso lui donnent une dimension suppl\u00e9mentaire.<br>En plus, <strong>c&rsquo;est hyper vite pr\u00e9par\u00e9<\/strong> : 10 minutes chrono et vraiment facile \u00e0 faire. Pourtant, je suis une vraie tanche en p\u00e2tisserie donc si je te dis que c&rsquo;est facile, tu peux me croire.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Plein de tests avant de trouver LA recette ! <\/h4>\n\n\n\n<p>J&rsquo;ai essay\u00e9 plusieurs versions. Je me suis acharn\u00e9e (autant te dire que j&rsquo;en ai rat\u00e9 plein : trop sal\u00e9s, trop bizarres, ou trop liquides). Le go\u00fbt du miso varie en fonction de la provenance et de la qualit\u00e9. C&rsquo;est mieux de l&rsquo;ajouter par petites quantit\u00e9s jusqu&rsquo;\u00e0 ce que le go\u00fbt te plaise. <\/span><br>2. <span style=\"color: #666699;\">Tu peux en mettre plus si cela te dit. La plupart des recettes que j&rsquo;ai trouv\u00e9es indiquent une bien plus grande quantit\u00e9 de miso. Il est toutefois bien \u00e9quilibr\u00e9 ainsi. <\/span><br><span style=\"color: #666699;\">3. C&rsquo;est important de prendre du miso BLANC pour cette recette, il est beaucoup plus doux que les autres et convient bien aux desserts.\u00a0<\/span><\/p>\n\n\n<div id=\"recipe\"><\/div><div
