{"id":4887,"date":"2017-07-01T12:44:25","date_gmt":"2017-07-01T12:44:25","guid":{"rendered":"http:\/\/aupaysdespiments.com\/?p=4887"},"modified":"2024-10-16T15:25:17","modified_gmt":"2024-10-16T13:25:17","slug":"cocotte-de-crevettes-et-vermicelles-de-haricot-mungo-au-gingembre-et-la-sauce-soja","status":"publish","type":"post","link":"https:\/\/www.aupaysdespiments.com\/en\/cocotte-de-crevettes-et-vermicelles-de-haricot-mungo-au-gingembre-et-la-sauce-soja\/","title":{"rendered":"Goong ob woon sen : prawns and glass noodles with ginger and soy sauce"},"content":{"rendered":"<p>On pr\u00e9pare le <strong><em>goong ob woon sen<\/em><\/strong>, nom Tha\u00ef de ce plat <strong>de crevettes et vermicelles de haricot mungo au gingembre et \u00e0 la sauce soja<\/strong> <em>(goong = crevette, ob = cuit au four ou en l&rsquo;occurence, ici, en cocotte, woon sen = vermicelles de haricot mungo)<\/em> &nbsp;par couches successives : <br>&#8211; une couche de lard<br>&#8211; puis des lamelles de gingembre<br>&#8211; suivies par une couche de p\u00e2te d&rsquo;herbes<br>&#8211; de belles grosses crevettes ou gambas<br>&#8211; et enfin une bonne dose de vermicelles tremp\u00e9s dans un m\u00e9lange de sauce soja un peu douce. <br>On cuit le tout \u00e0 feu vif, juste pour que le lard, le gingembre et la sauce soja caram\u00e9lisent au fond du pot, et juste assez longtemps pour que les crevettes soient cuites et les nouilles soient tendres.<br><span style=\"color: #993366;\"><strong>C&rsquo;est HYPER facile et ULTRA vite pr\u00eat<\/strong><\/span> : si tu veux en mettre plein la vue \u00e0 tes invit\u00e9s, c&rsquo;est le plat id\u00e9al.<\/p>\n\n\n\n<p>Quand j&rsquo;ai dit \u00e0 Nan que je pr\u00e9parais des <em>goong ob woon sen<\/em>, il a fait la grimace. Et au final il a ador\u00e9 ! Il a m\u00eame gratt\u00e9 le fond de la marmite pour r\u00e9cup\u00e9rer tout ce qu&rsquo;il pouvait, puis il a dit : la prochaine fois, on le pr\u00e9pare avec du crabe ! J&rsquo;ai beaucoup aim\u00e9 le \u00ab\u00a0ON\u00a0\u00bb!<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Comment cuisiner un goong ob woon sen?<\/h4>\n\n\n\n<p>Cela faisait des plombes que j&rsquo;avais envie de pr\u00e9parer ce <strong>d\u00e9licieux plat de crevettes <\/strong>et que je me creusais la t\u00eate pour trouver une combine pour le cuire. Je ne voulais pas encombrer ma cuisine d&rsquo;un gadget suppl\u00e9mentaire que je n&rsquo;utiliserai que pour ce plat. Et si je poste la recette sur ce blog, c&rsquo;est bien pour que tu puisses la r\u00e9aliser facilement \u00e0 la maison sans avoir besoin d&rsquo;un attirail on\u00e9reux.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Rat\u00e9 sur rat\u00e9 !<\/h4>\n\n\n\n<p>J&rsquo;ai commenc\u00e9 par sortir une <strong>terrine en c\u00e9ramique<\/strong> (celle que tu vois sur la photo), en me disant que c&rsquo;\u00e9tait le r\u00e9cipient parfait pour cuire \u00e0 l&rsquo;\u00e9touff\u00e9e car il se ferme bien. Je l&rsquo;ai plac\u00e9 sur ma gazi\u00e8re, j&rsquo;ai allum\u00e9 le feu. Et l\u00e0, tout \u00e0 coup, j&rsquo;ai eu un doute : <em>est-ce que ce truc r\u00e9sistera \u00e0 la chaleur ou va-t-il \u00e9clater en mille morceaux en cours de cuisson ?<\/em> <\/p>\n\n\n\n<p>Je voulais pouvoir te proposer une recette r\u00e9alisable quelle que soit la cuisini\u00e8re que tu as \u00e0 la maison. Tout le monde ne cuisine pas au gaz, et si t&rsquo;as une plaque (ou m\u00eame plusieurs) \u00e0 induction, la terrine en c\u00e9ramique, elle te fait une belle jambe !<br>J&rsquo;ai saut\u00e9 sur ma <strong>cocotte en pyrex<\/strong> et dans l&rsquo;id\u00e9e de pr\u00e9parer le tout au four. J&rsquo;ai transvas\u00e9 tout mon tralala dans la cocotte, pr\u00e9chauff\u00e9 le four &#8230; et l\u00e0&#8230; le doute ressurgit ! Ce plat est absolument d\u00e9licieux parce que le dessous qui est compos\u00e9 de lard, d&rsquo;herbes et de sauce soja caram\u00e9lise grace de la chaleur de la flamme. Et cela ne risque pas d&rsquo;arriver dans le four !<br>A ce stade l\u00e0, j&rsquo;\u00e9tais bien \u00e9nerv\u00e9e, j&rsquo;avais mis la cuisine sans dessus dessous (je te dis pas le temps que j&rsquo;ai pass\u00e9 entre mes 12&rsquo;000&rsquo;0000 de pauses photos et tous les essais de sauce pour obtenir le m\u00e9lange qui d\u00e9chire) et aucun moyen correct de cuire mon plat.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Et la lumi\u00e8re f\u00fbt !<\/h4>\n\n\n\n<p>Je te raconte \u00e7a juste pour que tu voies \u00e0 quel point on se creuse la t\u00eate pour des clopinettes.  J&rsquo;ai soudain r\u00e9alis\u00e9 que j&rsquo;avais des casseroles avec des couvercles &#8230; (ah bon ? vraiment ? bah oui ! Incroyable, elle a des casseroles dans sa cuisine, la nouille !) &nbsp;et que je pouvais pr\u00e9parer ces nouilles dedans !<br>Du coup, c&rsquo;est tout simple, tu prends <strong>une casserole de petit diam\u00e8tre mais assez profonde avec un couvercle qui ferme bien<\/strong>. Tu peux aussi en trouver des frais dans les \u00e9piceries asiatiques. Honn\u00eatement, il n&rsquo;y a pas une grande diff\u00e9rence entre les secs et les frais une fois cuits de cette mani\u00e8re. Si tu utilises les <strong>vermicelles s\u00e9ch\u00e9s<\/strong>, il faut d&rsquo;abord les r\u00e9hydrater. Certains fabricants recommandent de les placer dans l&rsquo;eau chaude &#8230; moi, je dis NON ! <br><strong>L&rsquo;eau chaude les ramollit trop<\/strong> et si on les laisse un poil trop longtemps, cela devient trop mou et fait une sorte de bouillie.<br>L&rsquo;eau froide est beaucoup mieux, on peut ainsi garder ces nouilles un peu plus fermes.<br>Il faut laisser tremper les <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-vermicelles-de-haricots-mungo-ma-facon\/\" target=\"_blank\" rel=\"noopener\">vermicelles<\/a> 10-15 minutes dans l&rsquo;eau froide de mani\u00e8re \u00e0 ce qu&rsquo;ils soient juste mous.<\/p>\n\n\n\n<p>S&rsquo;il te reste des vermicelles apr\u00e8s avoir pr\u00e9par\u00e9 ce plat, tu peux pr\u00e9parer une <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-vermicelles-de-haricots-mungo-ma-facon\/\" target=\"_blank\" rel=\"noreferrer noopener\">d\u00e9licieuse salade rafraichissante<\/a> ou les utiliser pour un plat de <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-citronnelle-aux-crevettes\/\" target=\"_blank\" rel=\"noreferrer noopener\">crevettes super de la sauce soja classique, elle est assez sal\u00e9e<br>&#8211; la sauce soja sucr\u00e9e, elle est \u00e9paisse et de couleur brun-roux<br>&#8211; et de la sauce soja fonc\u00e9e, elle est tr\u00e8s main, tu peux utiliser :<br><strong>sauce soja classique + Sauce soja sucr\u00e9e ou<\/strong><br><strong>sauce soja classique + Sauce soja fonc\u00e9e<\/strong><\/p>\n\n\n<div
