On a la chance d&rsquo;habiter en bord de mer et de pouvoir les commander au p\u00eacheur. Ils arrivent donc chez nous ultra frais, sans avoir fait un bain de formaline (ou autre salet\u00e9 qui permet de les conserver plus longtemps au march\u00e9) et sans provenir de grands bateaux de p\u00eache exploitant des Birmans et d\u00e9truisant les \u00e9cosyst\u00e8mes de la r\u00e9gion. <br>On les appr\u00eate toujours de plein de mani\u00e8res diff\u00e9rentes:<br>en <a href=\"http:\/\/www.aupaysdespiments.com\/en\/la-meilleure-des-salades-de-fleur-de-bananier\/\" target=\"_blank\" rel=\"noopener noreferrer\">salade de fleur de bananier<\/a>, <a href=\"http:\/\/www.aupaysdespiments.com\/en\/calmars-sautes-a-la-confiture-de-piments\/\" target=\"_blank\" rel=\"noopener noreferrer\">saut\u00e9s avec de la confiture de piments<\/a>, farcis, ou simplement en sauce tomate sur des p\u00e2tes fra\u00eeches. On les cuit en <a href=\"https:\/\/www.aupaysdespiments.com\/en\/tom-yam-aux-crevettes\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Tom Yam, <\/strong><\/a>ou \u00e0 la <a href=\"https:\/\/www.aupaysdespiments.com\/en\/encornets-vapeur-au-citron-a-lail-et-au-piment\/\" target=\"_blank\" rel=\"noreferrer noopener\">vapeur avec du citron. <\/a>Parfois, on les marine dans de l&rsquo;huile d&rsquo;olive et de l&rsquo;ail avant de les balancer sur le grill.<br>Mais au final, ce qu&rsquo;on pr\u00e9f\u00e8re par dessus tout, c&rsquo;est de manger ces <strong>calmars frits \u00e0 l&rsquo;ail <\/strong>: ils ont \u00e0 la fois croustillant et fondant et l&rsquo;ail frit les pimpe mieux que n&rsquo;importe quel autre ingr\u00e9dient.<br><\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Alors, on est d&rsquo;accord, ce n&rsquo;est en rien de la haute gastronomie et aucunement di\u00e9t\u00e9tique mais qu&rsquo;est-ce que c&rsquo;est bon !<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Quelques rat\u00e9s avant d&rsquo;avoir la bonne recette<\/h4>\n\n\n\n<p>J&rsquo;ai essay\u00e9 plusieurs fois d&rsquo;en pr\u00e9parer \u00e0 la maison mais ils \u00e9taient toujours d\u00e9cevants: trop gras, pas assez de go\u00fbt, trop mous, pas croustillants &#8230; pas un tr\u00e8s grand succ\u00e8s ! D&rsquo;autant plus que pas loin de chez nous, il y a un petit restaurant de rue qui les cuisine \u00e0 merveille et les miens ne leur arrivaient jamais \u00e0 la cheville.<br>Puis &nbsp;j&rsquo;ai trouv\u00e9 cette <strong><a href=\"https:\/\/www.gourmettraveller.com.au\/recipe\/chefs-recipes\/david-thompsons-deep-fried-squid-with-garlic-and-peppercorns-8472\/\" target=\"_blank\" rel=\"noreferrer noopener\">recette de calmars frits \u00e0 l&rsquo;ail de David Thompson<\/a><\/strong> (dont le <strong>restaurant Nahm de Bangkok<\/strong> a \u00e9t\u00e9 \u00e9lu meilleur restaurant d&rsquo;Asie en 2014). J&rsquo;ai tent\u00e9 sa recette car elle semblait plut\u00f4t simple \u00e0 pr\u00e9parer. <br>A\u00efe a\u00efe a\u00efe la pagaille ! <br>J&rsquo;ai termin\u00e9 la pr\u00e9paration de mes calmars en ayant une minuscule assiette de nourriture et la cuisine baign\u00e9e d&rsquo;huile de friture, une totale horreur. Tu vois, j&rsquo;aime pas les chefs qui publient des recettes et qui donnent pas leurs trucs pour les r\u00e9ussir. Je trouve \u00e7a super nul. Soit tu partages tes connaissances et tu le fais correctement, soit tu gardes tes recettes pour toi &#8230; Parce que si comme moi tu n&rsquo;es pas un sp\u00e9cialiste des <strong>calmars frits<\/strong>, tu ne peux pas deviner que les calmars frais et l&rsquo;huile chaude ne font pas bon m\u00e9nage : tout au long de la cuisson, l&rsquo;huile bouillante \u00ab\u00a0explose\u00a0\u00bb et gicle. Cette recette me semblait la plus int\u00e9ressante et la plus proche du plat pr\u00e9par\u00e9 par le petit resto du coin de rue. J&rsquo;ai choisi la voie de la sagesse en \u00e9coutant attentivement les gentils conseils de Nan. Je cite: \u00ab\u00a0mais \u00e7a va pas la t\u00eate, pourquoi t&rsquo;as frit les calmars sans les peler ? C&rsquo;est n&rsquo;importe quoi&#8230; et moi qui cr\u00e8ve la dalle &#8230; va falloir attendre encore combien de temps avant de manger ?\u00a0\u00bb<\/p>\n\n\n\n<p>Pour ma seconde tentative, j&rsquo;ai pris soin de bien peler tous les mini calmars que j&rsquo;avais sous la main. Une \u00e9ternit\u00e9 plus tard, j&rsquo;ai recommenc\u00e9 l&rsquo;op\u00e9ration friture avec un m\u00eame r\u00e9sultat : des cloques plein le visage et de l&rsquo;huile plein la cuisine.&nbsp;(Ouais, il semblerait que la sagesse ne soit d\u00e9finitivement pas pour moi. Chais pas ce qui m&rsquo;a pris de laisser Nan s&rsquo;exprimer dans ma cuisine).<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Petite astuce pour r\u00e9ussir de&nbsp; plat de calmars frits \u00e0 l&rsquo;ail<\/h4>\n\n\n\n<p>Au final, j&rsquo;en avais plein les bottes et j&rsquo;ai simplement farin\u00e9 l\u00e9g\u00e8rement les calmars. A ma grande surprise le r\u00e9sultat \u00e9tait nickel : aucune \u00e9claboussure, les<strong> calmars bien croustillant<\/strong> et un repas vite pr\u00eat. Je me suis bien \u00e9videmment empress\u00e9e de faire remarquer \u00e0 Nan que les calmars qu&rsquo;il \u00e9tait entrain d&rsquo;avaler avaient encore leur peau ! <br>Et j&rsquo;ai maudit David Thompson de ne pas avoir eu l&rsquo;intelligence de signaler dans sa recette qu&rsquo;une mis\u00e9rable cuill\u00e8re de farine pouvait \u00eatre la cl\u00e9 de la paix de m\u00e9nages.<\/p>\n\n\n\n<p>Voici donc un plat horriblement peu di\u00e9t\u00e9tique mais diaboliquement bon \u00e0 pr\u00e9parer !<\/p>\n\n\n\n<div id=\"aupay-2982304607\"
