Ce n&rsquo;est pas une ville que je connais bien ou que j&rsquo;appr\u00e9cie particuli\u00e8rement. Mais c&rsquo;est tout de m\u00eame agr\u00e9able de pouvoir, le temps d&rsquo;un coup de vent, avoir tout \u00e0 port\u00e9e de main. Je profite de faire du shopping et pars \u00e0 la recherche de bons restaurants \u00e0 d\u00e9couvrir. <\/p>\n\n\n\n<p>Ce n&rsquo;est pas toujours facile de trouver des restaurants au top. Bien souvent les restaurants conseill\u00e9s dans les guides ou sur <strong>TripAdvisor<\/strong> sont en-dessous de mes attentes. Parce qu&rsquo;au final, je ne vois pas l&rsquo;int\u00e9r\u00eat de payer un bras et une jambe pour un repas dans la capitale alors qu&rsquo;on peut manger la m\u00eame chose \u00e0 la maison ou dans un bistrot de rue. Souvent les restaurants se la p\u00e8tent et, sous pr\u00e9texte que le cadre est \u00e0 la mode, te servent un plat banal.<\/p>\n\n\n\n<p>Apr\u00e8s des heures de recherche online, j&rsquo;avais jet\u00e9 mon d\u00e9volu sur 2 restaurants ouverts en 2018. Ils semblaient prometteurs et les menus me faisaient de l\u2019\u0153il :<\/p><div id=\"aupay-2191576772\" class=\"aupay-insert-post aupay-entity-placement\" style=\"margin-top: 6px;margin-bottom: 6px;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-4895771430947602\" crossorigin=\"anonymous\"><\/script><ins class=\"adsbygoogle\" style=\"display:block; text-align:center;\" data-ad-client=\"ca-pub-4895771430947602\" \ndata-ad-slot=\"8266270428\" \ndata-ad-layout=\"in-article\"\ndata-ad-format=\"fluid\" data-full-width-responsive=\"true\"><\/ins>\n<script> \n(adsbygoogle = window.adsbygoogle || []).push({}); \n<\/script>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Les 2 \u00e9lus <\/h2>\n\n\n\n<p><span style=\"color: #99cc00;\"><strong>Le restaurant Saawaan<\/strong><\/span> propose un <strong>menu unique de plats de *street food* tha\u00efe<\/strong> revisit\u00e9s de mani\u00e8re gastronomique. On peut choisir une association de vins ou de th\u00e9s pour accompagner les diff\u00e9rents plats du menu. C&rsquo;est un restaurant qui vient de recevoir sa premi\u00e8re \u00e9toile Michelin.<br><strong><span style=\"color: #99cc00;\">Le restaurant Mihara Tofuten<\/span> <\/strong>quand \u00e0 lui \u00e9labore son <strong>menu autour du tofu<\/strong>. Chaque plat met en valeur une forme de tofu enti\u00e8rement pr\u00e9par\u00e9 selon les <strong>m\u00e9thodes artisanales traditionnelles japonaises<\/strong>. Ce restaurant a \u00e9t\u00e9 ouvert avec l&rsquo;aide de\u00a0Gaggan Anand \u00a0dont le restaurant de cuisine mol\u00e9culaire indienne a \u00e9t\u00e9 \u00e9lu meilleur restaurant d&rsquo;Asie.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><em><a href=\"https:\/\/www.facebook.com\/saawaanbkk\" target=\"_blank\" rel=\"noreferrer noopener\">Le restaurant Saawaan <\/a>n&rsquo;est ouvert que le soir de 18h30 \u00e0 23h00. Le prix du menu de d\u00e9gustation -10 plats- est \u00e0 1950 baht par personne (environ 55 euros). On peut ajouter 650 baht (18 euros) pour une association avec des th\u00e9s ou 2350 baht pour une association mets-vins (65 euros).\u00a0<\/em><br><\/li>\n\n\n\n<li><em>Mihara Tofuten ouvre pour le repas de midi et celui du soir. Le prix du menu, le soir, est tr\u00e8s \u00e9lev\u00e9 (4900 baht par personne pour le menu de d\u00e9gustation, environ 130 euros)<\/em>. <em>Le menu de midi est nettement plus accessible (1750 baht par personne pour le menu de d\u00e9gustation, environ 50 euros)<\/em><\/li>\n<\/ul>\n\n\n\n<p><em><strong>Il faut \u00e9galement noter que tous les restaurants \u00e0 Bangkok affichent les prix hors service et hors taxe. On doit donc ajouter 10% pour le service et 7% pour les taxes \u00e0 tous les prix ci-dessus. <\/strong><\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le restaurant Saawaan, un petit paradis \u00e0 Bangkok<\/h2>\n\n\n\n<p>J&rsquo;ai r\u00e9serv\u00e9 mon repas au restaurant Saawaan via leur site web. Le processus est tr\u00e8s efficace. J&rsquo;ai ensuite voulu r\u00e9server un <strong>repas de midi \u00e0 Mihara Tofuten<\/strong>. On m&rsquo;a demand\u00e9 un payement de 1000 baht par personne pour confirmer ma r\u00e9servation. \u00c7a m&rsquo;a refroidie\u00a0! C&rsquo;est la premi\u00e8re fois que je dois payer un acompte pour placer une r\u00e9servation dans un restaurant\u00a0! Du coup, je n&rsquo;ai pas r\u00e9serv\u00e9. Bien que je sois vraiment tr\u00e8s int\u00e9ress\u00e9e par d\u00e9couvrir le tofu sous toutes ses formes, je reste sur la retenue du fait des prix \u00e9lev\u00e9s du menu et du manque courtoisie vis \u00e0 vis du client. <\/p>\n\n\n\n<p>Le jour J, j&rsquo;ai re\u00e7u un coup de fil du <strong>r<\/strong>estaurant Saawaan pour confirmer l&rsquo;heure de ma venue et pour savoir si j&rsquo;avais des allergies ou des restrictions alimentaires\u00a0: sympathique et professionnel.<br>Le restaurant Saawaan a \u00e9t\u00e9 tr\u00e8s facile \u00e0 trouver en taxi. Il n&rsquo;est pas vraiment visible depuis la rue car la fa\u00e7ade est cach\u00e9e par des arbres. Mais il est tr\u00e8s pr\u00e9cis\u00e9ment indiqu\u00e9 sur Google Maps.<br>La salle \u00e0 manger a une ambiance sombre et feutr\u00e9e, lumi\u00e8res tamis\u00e9es. Les chaises de style bistro sont confortables et il y a suffisamment d&rsquo;espace entre les tables pour se sentir \u00e0 l&rsquo;aise.<\/p>\n\n\n\n<p><em><strong>Remarque: cet avis date de d\u00e9cembre 2018<\/strong><\/em><br><br>Le service est convivial et attentif. Bref, tout m&rsquo;a plu d&#8217;embl\u00e9e.<br>Je pensais commencer la soir\u00e9e par un petit cocktail ou une coupe de kir &#8230; que n\u00e9ni. La carte des boissons propose de l&rsquo;eau, du th\u00e9 ou du vin. La carte des vins est extensive et il y a \u00e9galement quelques vins propos\u00e9s au verre \u00e0 un prix d\u00e9cent.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Le menu<\/h3>\n\n\n\n<p>Niveau nourriture, pas besoin de se torturer le cerveau. Il y a un seul et unique menu de d\u00e9gustation, point barre. D&rsquo;un c\u00f4t\u00e9 j&rsquo;admire la cheffe de cuisine d&rsquo;avoir assez d&rsquo;assurance pour ne proposer qu&rsquo;un seul menu. Cela signifie qu&rsquo;elle l&rsquo;a peaufin\u00e9 et qu&rsquo;elle y croit. Mais d&rsquo;un autre c\u00f4t\u00e9, je trouve un poil d\u00e9rangeant de ne pas proposer d&rsquo;autres menus \u00e9tant donn\u00e9 qu&rsquo;il s&rsquo;agit du m\u00eame depuis l&rsquo;ouverture du restaurant Saawaan, il y a 6 mois de cela. J&rsquo;imagine que, pour les gens qui souhaitent retourner manger \u00e0 Saawaan apr\u00e8s une belle premi\u00e8re exp\u00e9rience, c&rsquo;est un peu frustrant de se refaire les m\u00eames plats. J&rsquo;esp\u00e8re que le menu se renouvellera dans le futur.<\/p>\n\n\n\n<p>J&rsquo;ai choisi de suivre la proposition de th\u00e9s pour accompagner les diff\u00e9rents plats. Le jaune d\u2019\u0153uf a \u00e9t\u00e9 poch\u00e9, il est coulant et cr\u00e9meux. Il est servi dans sa coquille avec une sauce mousseuse et onctueuse dont je suis bien incapable de te donner la composition et bien sur un coulis de tamarin. <\/p>\n<\/div>\n<\/div>\n\n\n\n<p>Le seul reproche que je peux faire \u00e0 cet amuse-bouche c&rsquo;est qu&rsquo;il \u00e9tait bien trop petit. Quoi de plus simple qu&rsquo;un <strong>laab<\/strong>\u00a0? Mais l\u00e0, le fait d&rsquo;utiliser un superbe poisson cru et d&rsquo;y ajouter quelques<strong> feuilles d&rsquo;ambulie aromatique<\/strong><em><strong> <\/strong>(pak kayang), <\/em>des <strong>fleurs d&rsquo;\u00e9pinard de Malabar<\/strong><em><strong>\u00a0<\/strong>(pak plang) <\/em>et du <strong>jus de bigarade <\/strong><em>(som saa)<\/em> en font un plat d&rsquo;une incroyable finesse. Une fois pr\u00eat, le laab est servi sur une feuille de bananier et on le mange, sans assiette, \u00e0 m\u00eame la table. Il s&rsquo;agit une <strong>minuscule carapace de crabe remplie de curry et servi avec du riz gluant au lait de coco cuit dans des feuilles de bananier<\/strong>. Plat que l&rsquo;on mange avec les doigts, comme il se doit lorsqu&rsquo;on attaque le riz gluant. Encore une fois, je trouve cela g\u00e9nial que dans un restaurant de ce standing, on nous fasse faire mouillette en mangeant sans services, \u00e7a casse la routine d&rsquo;un repas classique et cela nous ram\u00e8ne bien au style local de street food. Je n&rsquo;ai pas vraiment retrouv\u00e9 les m\u00eames saveurs dans ce b\u0153uf. Il \u00e9tait un poil fade \u00e0 mon go\u00fbt. Attention, ne va pas mal interpr\u00e9ter ce que j&rsquo;essaie de dire car l&rsquo;ensemble \u00e9tait vraiment harmonieux et \u00e0 la hauteur de mes attentes. Cela lui procure des ar\u00f4mes riches et profondes. Les graines et les tiges de lotus se retrouvent dans la farce parfaitement bien balanc\u00e9e au niveau du piment (ni trop fort, ni pas assez). Je ne parle pas du hachis de champignon au pesto de basilic sacr\u00e9 qui accompagne le tout, je parle du calmar coup\u00e9 en fines lamelles, saut\u00e9es dans l&rsquo;encre et dans le basilic sacr\u00e9 ! <\/p>\n<\/div>\n<\/div>\n\n\n\n<p>Cette adaptation du<strong><em> pat kaprow<\/em><\/strong> est juste g\u00e9niale. Le poulet au basilic servi dans tous les restaurants de coin de rue est g\u00e9n\u00e9ralement accompagn\u00e9 d&rsquo;un \u0153uf au plat. Ici, un jaune d\u2019\u0153uf marin\u00e9 dans du sel et du sucre puis d\u00e9shydrat\u00e9 est r\u00e2p\u00e9 sur ces tagliatelles de calmar dont la finesse de la sauce et la justesse des assaisonnements fr\u00f4laient la perfection.<\/p>\n\n\n\n<p>J&rsquo;aurais tr\u00e8s bien pu en rester l\u00e0, j&rsquo;avais assez mang\u00e9 et tout \u00e9tait sans fausse note. Viande tendre, juteuse et parfum\u00e9e qui aurait pu rester tr\u00e8s classique si elle n&rsquo;avait pas \u00e9t\u00e9 agr\u00e9ment\u00e9e de ces magnifiques pickles de bilimbi. <\/p>\n<\/div>\n<\/div>\n\n\n\n<p>Une d\u00e9couverte de plus pour moi qui n&rsquo;avais jamais entendu parler de ce fruit. Cru, il est extr\u00eamement acide mais une fois cuit, il devient juste parfait pour relever un plat un peu trop doux. J&rsquo;aurais \u00e9t\u00e9 heureuse avec uniquement le riz dans mon assiette\u00a0!<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>En pr\u00e9-dessert est arriv\u00e9e une quenelle de sorbet qui ne payait pas de mine &#8230; mais OH LA LA, c&rsquo;\u00e9tait de la bombe\u00a0! un incroyable sorbet \u00a0\u00e0 la bigarade et \u00e0 la coriandre avec une bonne dose de sel pour pimper le tout et donner un coup de boost ! Les graines de courges caram\u00e9lis\u00e9es un peu am\u00e8res relevaient le tout, le gel rhum-eau de coco \u00e0 se relever la nuit !
