C&rsquo;est un ingr\u00e9dient qu&rsquo;il faut un peu de temps pour apprivoiser. D\u00e9j\u00e0, \u00e7a pue, ensuite, c&rsquo;est tr\u00e8s sal\u00e9 et pas vraiment bon tel quel. <br>Par contre, si tu arrives \u00e0 mettre la main sur une belle <strong>p\u00e2te de crevette artisanale<\/strong>, c&rsquo;est de la bombe 100% umami. D\u00e9couvre ci-apr\u00e8s la recette du <strong>riz saut\u00e9 \u00e0 la p\u00e2te de crevette<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La p\u00e2te de crevettes<\/h2>\n\n\n\n<p>Le <strong>p\u00e2te de crevettes industrielle<\/strong> est souvent trop sal\u00e9e \u00e0 mon go\u00fbt. Ce n&rsquo;est pas un probl\u00e8me si on l&rsquo;utilise pour un <strong>curry<\/strong>. Il suffit juste de diminuer la dose de sel ou de <strong>sauce de poisson<\/strong>. Par contre, ce n&rsquo;est pas terrible si on l&rsquo;utilise pour pr\u00e9parer un <em><a href=\"https:\/\/www.aupaysdespiments.com\/en\/nahm-prik-kapi-tamarin-et-piment-doux\/\" target=\"_blank\" rel=\"noopener\"><strong>nahm prik kapi<\/strong><\/a>.<\/em><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"https:\/\/www.aupaysdespiments.com\/wp-content\/uploads\/2020\/11\/IMG20191230202853-1.jpg\"><img decoding=\"async\" src=\"http:\/\/www.aupaysdespiments.com\/wp-content\/uploads\/2020\/11\/IMG20191230202853-1-640x486.jpg\" alt=\"recette avec de la p\u00e2te de crevette\" class=\"wp-image-6124\"\/><\/a><figcaption class=\"wp-element-caption\"><em>Nahm prik kapi servi avec un choix de l\u00e9gumes crus<\/em><\/figcaption><\/figure>\n<\/div>\n\n\n<p>J&rsquo;ai la chance de pouvoir me procurer de la <strong>p\u00e2te de crevette locale de production artisanale<\/strong>. Elle est absolument fantastique : tr\u00e8s parfum\u00e9e et peu sal\u00e9e. J&rsquo;ai test\u00e9 plein de marques et plein de producteurs. Au final, mon choix se porte sur celle sans marque du p\u00eacheur du coin (qui est pr\u00e9par\u00e9e dans un petit village \u00e0 15 km de chez moi). Celle-ci est d\u00e9j\u00e0 un peu \u00e2g\u00e9e, car \u00e7a fait un moment qu&rsquo;elle est stock\u00e9e dans mon r\u00e9frig\u00e9rateur. En vieillissant, elle devient de plus en plus brun fonc\u00e9. Lorsqu&rsquo;elle est toute fra\u00eeche, elle est rose-gris. Pour les <strong>dips<\/strong> et <strong>sauces<\/strong>, je fais parfois un m\u00e9lange des deux. Le go\u00fbt de crevette est accentu\u00e9 sans pour autant ajouter trop de sel. C&rsquo;est particuli\u00e8rement bon de m\u00e9langer les 2 pour faire un \u00ab\u00a0<strong>Nahm Prik Kapi<\/strong>\u00a0\u00bb accompagn\u00e9 de l\u00e9gumes. (Il m&rsquo;a fallu plusieurs ann\u00e9es pour r\u00e9ussir \u00e0 faire du Nahm Prik Kapi qui plaise \u00e0 Nan et \u00e0 moi. Trop \u00e9pais, trop sal\u00e9, trop piment\u00e9, trop fort, ou pas assez de tout cela&#8230; Faudra un jour que je mesure pr\u00e9cis\u00e9ment et que je te donne ma recette).<\/p>\n\n\n\n<h4 parfum\u00e9 \u00e0 la p\u00e2te de crevette<\/strong> qu&rsquo;on sert avec de la viande caram\u00e9lis\u00e9e (porc ou poulet), des crevettes s\u00e9ch\u00e9es frites ou confites, du maquereau cuit \u00e0 la vapeur ou frit, des saucisses chinoises en rondelles, de la <a href=\"https:\/\/www.aupaysdespiments.com\/en\/salade-de-mangues-vertes\/\" target=\"_blank\" rel=\"noopener\">mangue verte<\/a>, de l&rsquo;omelette, du concombre, des piments, des \u00e9chalotes, du citron vert, des haricots longs, &#8230; \u00e0 choix. La mangue verte est \u00e0 mon avis indispensable car son acidit\u00e9 apporte de la fra\u00eecheur au plat. Si tu n&rsquo;en trouves pas, je te conseille de la remplacer par une pomme verte tr\u00e8s acide coup\u00e9e en fins b\u00e2tonnets.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
