La plupart des curry verts que j&rsquo;ai go\u00fbt\u00e9 dans les restaurants, ici ou en Europe, sont tr\u00e8s piment\u00e9s et ont peu de go\u00fbt. R\u00e9sultat des courses : BOF, PAS TR\u00c8S BON. <br>Les p\u00e2tes de curry que tu peux trouver dans le commerce sont \u00e0 l&rsquo;image des curry pr\u00e9-cit\u00e9s : pas particuli\u00e8rement savoureuses. <strong>C&rsquo;est vraiment super simple de pr\u00e9parer une p\u00e2te de curry maison<\/strong>, alors pourquoi s&rsquo;en priver ? <br>Et c&rsquo;est tellement meilleur !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Quelques infos sur cette p\u00e2te de curry vert <\/h3>\n\n\n\n<p><strong>La couleur de la p\u00e2te de curry vert provient des piments verts. <\/strong>On ne met g\u00e9n\u00e9ralement pas de feuilles de basilic dans la p\u00e2te de ce curry. Elles sont ajout\u00e9es dans le curry lui-m\u00eame, en fin de cuisson. <br>Du coup, si tu souhaites une p\u00e2te de curry pas trop piquante, il faut remplacer les piments forts par des piments doux, verts. On ne peut pas uniquement supprimer les piments forts car la p\u00e2te n&rsquo;aura pas assez de mati\u00e8re. <br>Il arrive aussi, dans la cuisine traditionnelle, qu&rsquo;on pr\u00e9pare la p\u00e2te de curry vert <strong>en y ajoutant des feuilles de la plante de piment<\/strong>. Cela apporte un d\u00e9licieux go\u00fbt herbac\u00e9.\u00a0<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Comment pr\u00e9parer la p\u00e2te de curry vert maison ? <\/h4>\n\n\n\n<p><strong>La p\u00e2te de curry est pr\u00e9par\u00e9e de mani\u00e8re artisanale dans un mortier, avec un pilon.<\/strong> Ca aussi, j&rsquo;ai test\u00e9 pour vous, et je dois dire que l&rsquo;exp\u00e9rience \u00e9tait int\u00e9ressante mais que je ne souhaite pas forc\u00e9ment la renouveler. Je trouve que c&rsquo;est un job totalement adapt\u00e9 \u00e0 Nan et \u00e0 ses bras muscl\u00e9s \ud83d\udcaa donc je le laisse ma\u00eetre du mortier. <br>Pour moi, c&rsquo;est mixer ! Le mixer fait du bon boulot et je ne l&rsquo;ai pas achet\u00e9 pour des prunes ! 2 bonnes raisons pour ne pas se fatiguer. Il est vrai que la consistance de la p\u00e2te de curry ne sera pas la m\u00eame si on la pr\u00e9pare dans un mortier ou si on la fait au mixer. Le go\u00fbt de la p\u00e2te pr\u00e9par\u00e9e avec le mortier est meilleur, aucun doute. Le mieux, c&rsquo;est encore d&rsquo;en <strong>faire des portions dans des sachets ou un bac \u00e0 gla\u00e7ons et de les congeler. <\/strong>Il faut compter 4 bonnes cuill\u00e8res \u00e0 soupe de cette p\u00e2te pour un curry pour 4. Ou alors, si tu es un pro, tu peux juste poser une main sur le haut du mortier pour te prot\u00e9ger des \u00e9claboussures et piler avec l&rsquo;autre main. <br>\ud83c\udf36\ufe0f  Lorsqu&rsquo;arrive le moment de broyer les piments, tout se complique. Ils donnent l&rsquo;impression d&rsquo;avoir un instinct de survie tr\u00e8s d\u00e9velopp\u00e9. Ils \u00e9jectent des gouttelettes de leur jus. Tu ne veux en aucun cas que cela atteigne ton visage&#8230; du coup, il faut, tout en pilant et en repoussant les \u00e9l\u00e9ments dans le mortier, utiliser ta troisi\u00e8me main pour \u00e9viter les \u00e9claboussures. <br>\ud83c\udf36\ufe0f  <strong>Attention, lorsqu&rsquo;on cuisine avec des piments,<\/strong> il faut vraiment essayer de les toucher le moins possible. Leur jus peut rester sur les mains m\u00eame si tu les laves et relaves (les mains). J&rsquo;ai d&rsquo;abord essay\u00e9 d&rsquo;ajouter de l&rsquo;eau, comme conseill\u00e9 dans la plupart des recettes. Ca marche, c&rsquo;est light mais cela ne donne pas une consistance tr\u00e8s belle \u00e0 la p\u00e2te. L&rsquo;huile est pr\u00e9f\u00e9rable mais \u00e7a donne une p\u00e2te grasse. Au final, <strong>je mets du lait de coco<\/strong> et c&rsquo;est juste parfait.
