Je te livre MA recette favorite, celle qui fait miam : les <strong>coques au curcuma et tamarin<\/strong>. <br>Ce plat se pr\u00e9pare avec ou sans p\u00e2te de curry, c&rsquo;est d\u00e9licieux dans les 2 cas. Quand j&rsquo;ai envie d&rsquo;un plat fort en \u00e9motions, j&rsquo;y ajoute de la p\u00e2te de curry kati, typique du sud de la Tha\u00eflande. Et quand j&rsquo;opte pour une version plus en douceur et en finesse, je pr\u00e9pare ce plat sans y mettre de p\u00e2te de curry, juste avec le lait de coco et les plantes aromatiques. Ce n&rsquo;est plus un curry, du coup. Ce plat s&rsquo;appelle alors <em>tom kati <\/em>qui signifie \u00ab\u00a0cuit dans du lait de coco\u00a0\u00bb. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">P\u00e2te de curry kati maison<\/h3>\n\n\n\n<p>C&rsquo;est une variante de curry rouge tr\u00e8s parfum\u00e9e. <a href=\"https:\/\/www.aupaysdespiments.com\/en\/curry-de-poisson-seche-et-de-liserons-deau\/\">Le <em>gaeng kati<\/em> (curry kati) <\/a>est tr\u00e8s r\u00e9pandu dans la r\u00e9gion o\u00f9 j&rsquo;habite. Il en existe un nombre infini de versions avec diff\u00e9rentes prot\u00e9ines et diff\u00e9rents l\u00e9gumes. Manger les pousses et feuilles de courge, j&rsquo;ai d\u00e9couvert cela ici. Dire que j&rsquo;ai toujours eu des courges dans mon jardin et que je ne savais m\u00eame pas qu&rsquo;on pouvait manger les feuilles de la plante ! Une fois cuit, cela ressemble \u00e0 des \u00e9pinards, mais avec un go\u00fbt plus doux. Pour voir comment pr\u00e9parer cela : <a title=\"Squash leaf sprouts\" href=\"https:\/\/www.aupaysdespiments.com\/en\/pousses-de-feuilles-de-courge\/\" target=\"_blank\" rel=\"noopener\">clique ici<\/a>.<br>Si tu veux en mettre dans ce curry, tu peux les ajouter 15 minutes avant la fin de cuisson.<\/p>\n\n\n\n<p>\ud83c\udf36\ufe0f  Le <strong>galangal <\/strong>n&rsquo;est pas indispensable pour cette recette <strong>de coques au curcuma et tamarin<\/strong>, mais il ajoute une touche de fra\u00eecheur. Ce n&rsquo;est pas une bonne id\u00e9e de le remplacer par du gingembre. <br>Sur la photo ci-dessous, tu peux voir les 2 morceaux que je me suis fait refiler ce matin. Un tout beau tout frais qui sort juste de terre (\u00e0 droite) et un bien vieux pas beau, mais qui donne quand m\u00eame bon go\u00fbt. Du coup, je laisse les coquilles. Fais comme bon te semble, si tu pr\u00e9f\u00e8res, enl\u00e8ve-les avant de servir. <\/p>\n\n\n\n<p>\ud83c\udf36\ufe0f Normalement, on sert ce curry avec tous les condiments. Chacun les met de c\u00f4t\u00e9 dans son assiette car on ne mange pas le galanga, la citronnelle, le curcuma, les feuilles de citronnier ou les noyaux du tamarin. \ud83d\ude42 Tu peux les enlever une fois qu\u2019ils ont bien parfum\u00e9 ton curry, avant de mettre les coquillages. Il suffit de filtrer la sauce au lait de coco avant d&rsquo;en recouvrir les coquillages. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">D&rsquo;autres d\u00e9licieuses recettes de
