What Is Khao Tom?
In Thai, khao means “rice” and tom means “to boil.” Khao tom is therefore, quite simply, rice cooked in a large amount of water or broth. The soup is then topped with fresh ginger, green onions, cilantro, white pepper, and crispy fried garlic. Depending on the version, pork, chicken, fish, shrimp, or an egg can also be added.
The result is a light, flavorful, and nourishing soup.
Rice Soup, a Popular Dish Throughout Asia
Affordable and perfect for reducing food waste, rice soup is a great way to turn leftover rice into a warm, nourishing, and flavorful meal. Originally from China, it can now be found in many different forms throughout Asia.
📖 Khao Tom or Congee: What's the Difference?
Khao tom is often described as Thai congee, but the two dishes aren't quite the same. In khao tom, the grains of rice remain visible and are served in a light broth. Thai congee, called jok, is cooked for much longer, until the rice breaks down into a thick, creamy porridge.

Different Types of Khao Tom in Thailand
In Thailand, khao tom comes in many different versions:
khao tom thale: rice soup with seafood;
khao tom gai: rice soup with chicken;
khao tom moo: rice soup with pork;
khao tom pla: rice soup with fish;
khao tom goong: rice soup with shrimp.
Khao tom can be served in several ways:
- Rice soup with pieces of fish, pork, chicken or seafood, seasoned with ginger, ground pepper, fried garlic and pieces of pickled white radish;
- The same base, sometimes with a poached egg, a hard-boiled egg or even quail eggs, plus a spoonful of spicy nam prik pao;
- The “deluxe” version: khao tom kui, a creamy rice soup served with lots of different dishes in small portions, so everyone can add whatever they fancy. For example, you can serve Thai congee with:
- ginger chicken,
- a crispy small fish salad,
- water spinach stir-fried with chillies,
- Chinese broccoli stir-fried with dried fish,
- century eggs,
- a fried egg salad,
- fish with Chinese celery,
- or pickled white radish stir-fried with eggs.
And anything else you fancy...
🍜 How can you make this rice soup your own?
Replace the chicken meatballs with thinly sliced chicken, minced pork, prawns or pieces of white fish. For a meat-free version, use vegetable stock and add mushrooms, tofu or a soft-boiled egg.
Where can you eat khao tom in Thailand?
You’ll usually find basic rice soup at street stalls serving breakfast, or at the market in the late afternoon. A portion costs between 20 and 40 baht. The vendor fills a plastic bag with piping-hot rice soup and asks what you’d like to add. I always choose shredded chicken with plenty of pepper and ginger, plus fried garlic. Nan goes for fish, no pepper, but some chilli and a little ginger. Neither of us is particularly keen on adding a poached or hard-boiled egg to our congee. To each their own!
The “deluxe” version is mostly enjoyed in the evening at specialist restaurants. A bowl of plain rice soup usually costs between 5 and 10 baht, and each small side dish is charged separately, between 25 and 60 baht.

In Thailand, takeaway soups and curries are very often poured into plastic bags and carefully sealed with a rubber band.
A great recipe for using up leftover rice
Tu peux donc utiliser :
- uncooked jasmine rice (Thai rice),
- or simply leftover cooked rice from the day before.
The right ratios for rice soup
- For cooked rice: add 4 parts water to 1 part rice.
- For uncooked rice: use approximately 10 parts water to 1 part rice.
This method also works very well in a rice cooker. The longer the rice cooks, the creamier and more comforting the soup becomes.
How do you make tender chicken meatballs?
As you’ve probably gathered, you can keep things simple and add small pieces of meat or fish, or even prawns, to this soup. But I have to say, I particularly love it with lovely, tender, flavourful meatballs. They really don’t take long to make.
For tender meatballs, I prefer using minced chicken thigh meat. It has a little more fat and stays much juicier than chicken breast. I mix the chicken with garlic, fish sauce, white pepper and, depending on my mood, a little finely chopped fresh coriander. Then I shape the mixture into small meatballs, about 1.5 to 2 cm in diameter.
Simply drop them straight into the simmering broth. They cook gently while adding flavour to the soup.
🌿 A handy tip for shaping the meatballs
The chicken mixture is quite sticky. Lightly wet your hands or use two teaspoons to shape the meatballs, then drop them straight into the broth.
Essential toppings to add as you please
The toppings bring fragrance, freshness and different textures to this simple soup. You can serve khao tom with:
- fresh ginger cut into very fine matchsticks;
- Chinese spring onions;
- fresh coriander;
- ground white pepper;
- crispy fried garlic;
- a few drops of spring onion oil;
- fish sauce;
- fresh chillies or chilli powder.
Fried garlic is easy to find in Asian grocery shops, but it’s also very simple to make at home. The same goes for spring onion oil.
💡 Chef’s tip
Keep an eye on the garlic
Remove the garlic from the oil when it is lightly golden. It will continue to darken for a few moments off the heat. If it turns brown in the pan, it may taste bitter.

Rice Soup with Chicken Meatballs
Ingredients
- 1 part de riz jasmin cru (riz thaï)
- 10 volumes of water
- 1/2 tsp of salt
- 1 grosse gousse of garlic pressée
- 1 tsp of fish sauce
- coriandre hachée
- poivre blanc moulu (beaucoup)
- 1 pincée of salt
- 3 cloves of garlic pelées et hachées grossièrement
- 1 grosse pincée of salt
Instructions

Serve immediately.
